2 1. STERIBRU RETORT 1.1. INTRODUCTION The fd industry is under great pressure t ffer cnsumers fd with the highest level f quality and safety, because the inherent prperties f fd als make it a micrbilgically perishable prduct. Fr this reasn, the Fd Industry needs t apply technlgical barriers that guarantee the cnservatin and prlng the useful life f fd. One f the mst effective methds fr the cnservatin f perishable fd is sterilizatin by direct applicatin f mist heat, which is dne n fd packed in hermetically sealed cntainers. This methd eliminates the pathgenic micrrganisms that are dangerus fr the cnsumer; It als eliminates thse that alter the fd in strage and distributin cnditins. We must apprpriately cntrl the thermal treatments in rder t exceed the lethality limits f the pathgenic micrrganisms. This will ensure the fd safety and its cmmercial sterility. This is pssible by applying a risk management system, based n the methdlgy f hazard analysis and critical cntrl pints; accrding t article 5 f Regulatin 852/2004 n the hygiene f fd prducts (L 226/3-06/25/2004). Therefre, it is imprtant t highlight the enrmus imprtance f having the right equipment and the right cnditins t achieve the perfect executin, reprducibility and cntrl f thermal prcesses. Our designs are the result f mre than 25 years f experience in the autmatin, validatin and instrumentatin f retrts SPRAY STERILIZATION SYSTEM The retrt heats and cls using a heat exchanger and recirculating the water with a pump. In additin, the system recvers all cndensate frm the steam and water used fr cling. The system cntrls the temperature gradually, precisely and independently thrughut the prcess. The spray system is suitable fr any type f retrtable packaging (plastic bwl, tray, puch, easy-peel, etc.) Page 1 f 8

4 1.4. SAFETIES Safety gate: A pneumatically lcking system lcks the dr autmatically when there are unsafe cnditins f temperature, pressure, water level and prcess run. This way, the nrmal pening f the dr by the pneumatic cylinder is disabled under these cnditins Overpressure safety valves: The retrt has a safety valve installed t ensure the discharge f pressure in case f system failure Vacuum safety valve: The retrt has an installed valve t avid negative pressures inside the machine Electrical failure: The autmatic cntrller memrizes the phase and remaining time f the prcess in case f pwer failure. The electrical restratin will maintain the psitin prir t the incident, but in a stp cnditin. Furthermre, during the lss f tensin the valves installed in the retrt will be psitined t ensure safe cnditins during the curse f the incident VALVES The valves f Autmatisms Teinc, S.L installed in their Steribru retrts ensure prper regulatin and cntrl f the fluids invlved in the prcess WATER RECIRCULATION PUMP Prper selectin f the water recirculatin pump is necessary t ensure that the temperature in the retrt is hmgeneus. Steribru retrts cntain the apprpriate electrical and mechanical safety that guarantees its prper functining: Cntrl and autmatic warning f faults in the recirculatin system HEAT EXCHANGER It is the element that enables the heat exchange between the steam / clant and the water f the retrt, withut them cming int cntact. 5 1.8. INSTRUMENTATION All instrumentatin installed in the Steribru retrts is in accrdance with the regulatins 21 CFR parts 11 and 113 f the FDA. Digital thermmeter. Analg gauge. Circular template recrder fr temperature and pressure. Autmatic water level cntrl. SCADA system with cnnectin and PC cntrl. Differential pressure switch fr pump cavitatin cntrl. Prduct prbe t cntrl the temperature f the prduct with its lethality calculatin (F) CONTROL PANEL The autmatic cntrl system included in the Steribru retrt is ptimized fr driving thermal prcesses. With an accuracy f indicatin: ± 0.1ºC / ± 0.05 bar and regulatin: ± 0.2 C. The cntrl panel, in additin t a PLC and an Integrated Display Cmputer, can incrprate a temperature / pressure recrder and a synptic f realtime peratin fr an easy identificatin f the functinal state f the system and all its cmpnents. The purpse f the cntrl panel thrugh the prgrammer will be: Autmatic prcess cntrl Manual cntrl f the different cmpnents f the system. Alarms cntrl due t prcess deviatin. Recrding f variables invlved in sterilizatin. Recipe scheduling. Selectin f wrking mde system. Cnfiguratin and adjustment f variables. The cntrl panel can be munted in the retrt itself r centralized in a cntrl rm tgether with ther panels. 6 PROGRAMMER The prgrammers used in Steribru retrts ensure cmplete cntrl f the sterilizatin prcess with simple and intuitive peratin. Specially prgrammed fr thermal prcesses in retrts, they have different tls and alarms fr autmatic actin t cntrl the prcess time frm certain deviatins r incidents that culd lead t an alteratin in the nrmal treatment temperature.
