6 INTRODUCTION This publication revises estimates for milk which were published on a current basis in monthly reports during The current estimates were based on $amp1e surveys of producers drawn from lists of all known milk COlli operations. in each StateB Revisions were made only after a thorough review of the original estimates and a consideration of new data, including the 1982 Census of Agriculture. Other series of check data used included Federal Milk Market Order information and rec~ipts of milk by plants and dairy product manufacturers. Terms used in this report are defined below: I I Milk cows means cows kept maln1y,for milk prdduction, but not those kept to nurse calves. The estimates include dry milk cows between periods of lactation.. Heifers were not included as milk cows until they had calved for the first time. Milk production estimates for each State were the product of the estimated number of cows multiplied by the rate per cow. Rate per cow (monthly and annual) was based on all milk cows, in milk and dry. Milk marketed means whole milk and milk equivalent of farm-separated cream sold to plants according to receipts reported in surveys of all dairy plants. Adjustments were made for mi 1k received directly from out-of-state 'producers. Milk sold directly to consumers included sales by producet'-distributors who marketed mi 1 k from their' own herds, mi 1 k sold to nei ghbors, and mi 1 k produced in herds kept by institutions. Prices received by farmers for milk were based on sales to dairy plants. These data provided monthly average prices to producers for each State. A sample of producer-distributors was used each month for the prices received for all milk sold directly to consumers. Farm income from milk and cream was determined from cash receipts for the sale of whole milk to plants, cream to plants, and milk to consumers. An avercige price per unit was computed by dividing total cash receipts by the equivalent quantity of whole milk sold. This average price was applied to milk used in farm households to measure farm-use value which, in turn~ was added to cash receipts to determine gross farm income. The same average price was applied to total milk production to compute farm value. SU~P1Y and utilization of milk: All data are based on whole milk equiva ent using the milkfat content of ingredients and products. An estimate of total supply is derived by taking total milk production plus the milk equivalent of net imports of ingredients and net out-of-storage movement of cream. Utilization of milk in manufactured products is based on the total milkfat required to produce the products and includes the milk equivalent of any imported ingredients used. 4 i 4
