15 Page NI 12/05 1. IDENTIFICATION PLATE The identification plate, whatever the oven, is fixed on the oven front panel, on the lower left corner, having opened the door. In any correspondence about your equipment please quote: Identification plate - The model number (Model.) - The serial number (Fab.Nr.) - The date (Date). 6 and 10 level ovens 20 level ovens Location of the identification plate and plate for gas change

16 Page NI 12/05 Plate for gas change The box marked with a cross indicates the gas for which the equipment is adjusted A second plate is fixed near the identification plate which indicates: - gas(es) for which the equipment has been adjusted - country(ies) of destination. Country of destination of the equipment IN CASE OF GAS CHANGE (See paragraph: Adaptation of the equipment from one gas to another), Modify this plate and mark the new gas used. FILL the "Country" box with the name of the country where the equipment is installed. NOTE: The Gas/Pressure pair for which the equipment is adjusted must be authorised in the country in question. Verify this point in the paragraph/chart: Adaptation of the equipment from one gas to another.

17 Page NI 12/05 2. INSTALLATION N TYPE AND POSITION OF CONNECTIONS See "Technical Data" at the beginning of this instruction manual. 2.1 GENERAL REQUIREMENTS Attention! The gas ovens are equipped with a polarised electronic flame control box. When connecting to the mains, check the neutral terminal is connected to the neutral and the phase terminal to the phase and the client supply line has a neutral connected to the earth and not an impedant neutral. The installation, modification or repair of the equipment must be carried out according to the rules of the art by a qualified installer and repairer. The appliances must be installed with sufficient ventilation to prevent the formation of excessive concentrations of substances harmful for health in the premises in which they are installed. The equipment is TYPE A (not connected to a gas vent for combustion products). The renewal of fresh air required for the supply in combustion air is 2 m3/h per kw of the heat release rate. These units are designed to work in an explosive atmosphere. Due to this, they must not be installed in a zone relating to the ATEX provision. These appliances may only be installed with their rear side against a wall or a partition. The latter must be made from non combustible materials or, in the contrary case, they should be lined with an appropriate material, properly insulating and non combustible. These appliances may only be installed on a floor with a maximum slope of 1 cm/m. Observe the miminum distances necessary between the equipment and the partition (wall or other cooking equipment) (4 cm on the left, 50 cm on the right and 5 cm at the back). Do not place any heat source against the right side of the equipment.

18 Page NI 12/05 In the case of a 6 or 10 level Precisio oven, it must not be placed to the left side of GAS equipment (cooking units ) without any system to avoid recycling of burnt gases towards the oven. Necessary liner Exhaust of burnt gases GAS appliance The manufacturer certifies that the packaging conforms to the provision 94/62/CE of and requests that the fitter (and the user) observe the ratings with regard to recycling or reuse of the packaging materials. 2.2 HANDLING Should the appliance need to be handled, it must only be done with adapted lifting devices. Should the appliance need to be transported, this must be done on its original pallet and never stacked on other appliances under any circumstance. When moving it and in the absence of it pallet, the appliance should be carried and not pulled. 2.3 UNPACKING Before installation, remove the strapping from the appliance. The individual parts are not bolted down. Remove plastic film from the stainless steel parts before heating.

19 Page NI 12/05 3. INSTALLATION: POSITIONING General rules The left side of the equipment must be more than 40 mm from a wall. The right side of the oven must not be placed against a heat source. A gap of at least 500 mm is necessary for the installation and maintenance of the equipment (right side of the oven) AND 10 LEVEL OVENS Levelling of the base and the oven: Level the base. Maximum floor slope of 1 cm/m. Position the oven on its base. The imperative height of the load threshold is 900 mm. 900 Base fixation: The base must be fixed to the wall by means of two brackets delivered with the base. Fixation brackets

20 Page NI 12/ LEVEL OVENS Oven levelling: The oven must be leveled in the bottom part of the capacity. Maximum floor slope: 1 cm/m. The imperative height of the load threshold is 355 mm. Oven fixation: The oven is to be fixed to the floor by means of two bases delivered with the oven. Oven leg Base 3.3 WASHING ARM (PRECISIO OVEN) The holder for using the washing arm may be installed: - against a wall (ovens of any model) - at the base (6 and 10 level ovens) - on the side of the oven (6 and 10 level ovens).

22 Page NI 12/05 4. INSTALLATION: CONNECTIONS General rules The left side of the appliance must be placed at more than 40 mm from a wall. The right side of the oven must not be placed close to a heat source. A gap of at least 500 mm is necessary for the installation and maintenance of the equipment (right side of the oven). 4.1 ELECTRICAL CONNECTION Location of the equipotentiality terminal The electrical connection is made at the left on the back of the equipment, whatever the model. - Remove the lid of the terminal box located behind the appliance. - Introduce the cable through the gland. - Connect the wires (follow the neutral and earth lines). - Tighten the gland. - Put the lid back in place. - Connect the equipotential link to the terminal designed for this purpose. IMPORTANT: Only use supply cables of the HO 7 RNF type with 3 x 2.5 mm 2 section. Provide an approved suitable isolating device for safety of persons (with contact separation of at least 3mm) in accordance with current regulations. The installation must comply with current applicable national legislation (for France, standard NF ). The appliance must be connected to the earth. The various electrical devices must also be connected by an equipotential link (all metal structures to the same voltage) through a terminal forseeen for this purpose, placed beside the connecting gland. The manufacturer cannot be held responsible if these instructions are not followed.

23 Page NI 12/05 INSTALLATION OF IMPEDANT NEUTRAL The appliance is properly connected but the client has his supply according to the IT diagram. When there is a defective insulation on this type of network, the voltage neutral relating to the ground increases and may reach 230V. Consequently the equipment concerned have a built-in gas safety unit (automatic ignition and flame control) the control of which is polarised: this requires the neutral and the phase to be properly polarized relating to the ground. Due to this, these faulty situations cause the control box to switch off, even if the technician took care that connection was properly made at installation. In this case, it is necessary to install an isolating transformer. Note: There are no problems with the equipment supplied in Three-phase 230 V (supply between 2 phases).

24 Page NI 12/ GAS CONNECTION Check that the adjustments made to the equipment correspond to the nature and pressure of the gas distributed in the installation. (See paragraph 1: Identification plate). Connect the appliance to the gas inlet piping by interposing a shut off valve which will isolate the appliance from the rest of the plant. The gas supply piping will be of a size so as to minimise the load losses: Its diameter will be determined depending on its run (length, elbow number ) and total power of the appliance. VERIFICATION OF THE CONNECTING PRESSURE To check the gas presure of the appliance, just connect a water column pressure gauge to the pressure tap (see the sketch hereunder), as the burner is functioning. The gas pressure so measured must be equal to that indicated on the identification plate for the gas used (See paragraph 1: Identification plate). Pressure tap NOTE: The appliance is equipped with a safety flame control device. When starting the plant, it may be necessary to vent air from the piping. For this purpose, switch on the appliance, select the dry mode and display a temperature above 100 C. The ignition attempt starts and may lead to a safety release if ignition has not succeeded (after about 1 minute), in this case, switch off the appliance and repeat the operation. Hose connection: Solution recommended: NF approved gas hose ("TUBOGAS" type, length 0.75 m, 20/27 (3/4") without hose connector.

25 Page NI 12/ WATER CONNECTION General features Filter - It is necessary to use 7 TH MAXIMUM softened water. - Cold water exclusively filtered at 100 µ (provide a filter). - Foresee a control valve close at hand. - The manufacturer cannot be held responsible for any deterioration due to lime deposits (on the enclosure walls, heating elements, turbine, hydraulic ducts ). - Inlet at the back of the appliance through a 20/27 male thread for the 6 and 10 level ovens, 15/21 male thread for 20 level ovens. It is possible to use a filter (1 per oven). This filter is available from the Spare Part Department (Complete filter code: , code for sieve alone: ). Inlet Outlet to the oven Sieve The connection of this filter must be visible and accessible. The assembly position is made with the filter downwards. In the case of 6 and 10 level ovens delivered with a base fitted with a spraying equipment, it is necessary to provide two water supplies. One supply for the oven ( 20/27 male thread) and one supply for the spraying equipment ( 20/27 female thread).

So as to avoid any rise of wastewater in the cooking enclosure, a vent to the open air must be made between the drainage system of the appliance and the outside sewage system AND 10 LEVEL OVENS the venting system must be made at height lower than the height of the oven drain. Ø 25 minimum interieur 50 mm minimum Waste water may be high temperature condensates (98 C). Due to this, PVC type materials must be excluded.
