8 4. ADAPTATION OF THE UNIT FROM ONE GAS TO ANOTHER See the instructions destined for the installer 5. VERIFICATION OF TEMPERATURE SENSORS 5.1 PT100 SENSOR Component of PT100 sensor PT100 The temperature sensor is constituted of a resistance sensor with a value of 100 ohms for a temperature of 0 centigrade, ohms for the temperature of 100 centigrade. The resistance variati on according to the temperature is linear. The resistance measurement gives directly the temperature measured. The sensor is not polarised. The sensor is lengthened with a copper wire. Correspondance of Temperature in C and Resistance in for PT100 sensor C

9 Hints for reading the chart: Find the resistance corresponding to the temperature of 164 C. Find the intersection of the line of 160 C and the column of 4 C. The reading indicated Ohms. Verification PT100 Ω MΩ With an 200 ohm sized ohmmeter verify the sensor resistance (less than 107 ohms for 20 centigrade). Verify sensor insulation between one of the wires and the metallic part with the 20 megohms ohmmeter (the value is over 10 megohms). Verify the continuity between the screen and the metallic part of the sensor 9

SUBSTITUTION OF COMPONENTS 6.1 ACCESS TO THE COMPONENTS LOCATED BEHIND THE FASCIA - Unscrew fixation screws of the control knobs. - Remove the control knobs. - Unscrew and remove both M5 x 16 screws under the strip. - Remove the fascia: for this purpose lift it (1), then pull it forwards by its lower part and freeing it with a downwards movement (2). For reassembly, carry out the operations reversely. 6.2 ELECTRONIC AND ELECTRIC COMPONENTS Potentiometer Lugs Follow the dismantling procedure for the control fascia. Dismantle the potentiometer of the on/off switch : for this purpose unfold the fixation lugs. Potentiometer 10

11 Supply cable Dismantle the potentiometer support and mount it on the new potentiometer without forgetting about the brass ring. Clips Support Brass ring Be careful to properly position the potentiometer on its support. The supply wires must be turned in the same direction as the fixation lug. Mount the potentiometer assembly on the on/off switch. Screw Open the fryer door. Unscrew both fixation screws of the electric box cover and remove it. Potentiometer connection Disconnect the connector from the old potentiometer and remove the cable together with the grommet. Connect the new potentiometer on the regulation card without forgetting to place the grommet. (See Regulation card) Pay attention to the direction of the terminal strip. The foolproof system ensures that the wires are turned towards the sensor terminal strip (upwards). Regulation card and lifting card (option) Screw Open the fryer door. Unscrew both fixation screws of the electric box cover. 11

12 Remove the lid. Now you have access to the control cards. Screw Unscrew the 4 fixation screws of the electric box and remove it. Unscrew the 4 fixation screws of the front lid of the fryer. Screw 13

14 Disconnect the burner gas pipes and pilot burner, and solenoid valve. Pilot burner insulating lid bracket Unscrew both fixation screws from the bracket of the pilot burner insulating lid and remove it. Unscrew the fixation nut of the pilot burner insulating lid and remove it. Remove the insulation. Nut Remove the spacers at the fixations. Unscrew both fixation nuts of the sealing «baffle» and remove it. Nut Remove insulation and change it. Remove the pilot burner + electrode assembly. Carry out the same procedure in reverse order for reassembly. 14

15 6.4 BURNER Follow the procedure for access to the pilot burner assembly. Pull the burners towards yourself. Carry out the same procedure in reverse order for reassembly. 15
