2 WHAT IS FSSC 22000? Developed by the Foundation for Food Safety Certification (FSSC), the FSSC is a framework for effectively managing the food safety responsibilities of an organisation. It requires that organisations should have a documented Food Safety Management System (FSMS). The FSSC certification is granted to food manufacturers and organisations that are compliant with the guidelines stipulated in the FSSC Scheme and have had their organisation audited by an accredited third party auditor to ensure compliance. The Global Food Safety Initiative (GFSI) fully recognises the FSSC Scheme, which combines the FSMS requirements of ISO 22000, the sector specific technical specifications for Prerequisite Programs (PRPs) and Additional FSSC Scheme requirements.

3 BENEFITS OF FSSC CERTIFICATION It helps organisations manage risk by developing a system for the continuous management and monitoring of potential food safety hazards. It helps suppliers maintain their current customers since certified companies now require their suppliers to be certified. Certification increases market reach since most large retailers and multinational companies are also demanding that their suppliers become certified. By becoming certified, you are also preparing your organisation for upcoming regulatory changes, since most countries all over the world are now making changes to their food safety regulations.

4 CHANGES TO THE FSSC In order to keep up with changing market expectations, the FSSC certification scheme was revised with the new audit requirements (version 4 published in December 2016, and a further update (v4.1) published in July The main reason for the revision of the FSSC certification scheme was to align it with the benchmark requirements of the Global Food Safety Initiative s Guidance Document v7.1, published in April The changes also allowed improvement of the FSSC scheme in response to feedback received from the industry as well as certification and accreditation bodies. Since the revised FSSC scheme is based on the new GFSI requirements, it is no surprise that the Food Fraud and Food Defence clauses are the biggest changes to the Scheme. There has also been the introduction of an unannounced audit program. 5 Companies have to implement the new audit requirements in terms of the revised standards. Since the revision of the FSSC scheme, retailers have embraced the changes and have already started incorporating the new requirements into their standard checklists. Retailers are also now expecting suppliers to comply with the new requirements. Entecom provides provides a consulting service to ensure that companies pass their Food Safety Audits by assessing the gaps and implementing the requirements stipulated in the FSSC version 4.1. If a supplier is not compliant, the gap will affect their audit score and performance. Starting from January 2018, suppliers will be audited based on the requirements for FSSC version 4.1.

6 PREVENTION OF FOOD FRAUD What is Food Fraud? Food Fraud is defined as the collective term encompassing the intentional substitution, addition, tampering or misrepresentation of food/feed, food/feed ingredients or food/feed packaging, labelling, product information or false or misleading statements made about a product for economic gain that could impact consumer health (GFSI BRv7:2017). Latest requirements Have a documented Food Fraud Vulnerability Assessment to identify any potential vulnerabilities to acts of Food Fraud. Develop control measures for the mitigation of any identified Food Fraud vulnerabilities and prioritise them. Have a documented Food Fraud Prevention plan that shows how the organisation has implemented, managed and controlled preventive measures, in accordance with the organisation's food safety management system. Review the Food Fraud Prevention plan annually or after any actual or potential failure of a preventive measure.

7 FOOD DEFENCE What is Food Defence? Food Defence is defined as the process to ensure the security of food and drink from all forms of intentional malicious attack (including ideologically motivated) leading to contamination (GFSI BRv7:2017). Latest requirements Have a documented Food Defence Threat Assessment to identify any potential acts of sabotage, vandalism and/or terrorism and to identify any potential vulnerabilities to such acts. Develop control measures for the mitigation of any identified threats and prioritise them against the threats. Have a documented Food Defence plan that shows how the organisation has implemented, managed and controlled the control measures. Review the Food Defence plan annually or after any actual or potential failure of a control measure.

8 UNANNOUNCED AUDITS The unannounced audits are mandatory for any organisation that is certified under FSSC version 4.1. According to the new guidelines, the unannounced audits can be conducted in a period of between 3 and 12 months after the previous audits. While the certification body holds the decision of which audits will be unannounced, the guidelines state that the initial audit and recertification audit can never be unannounced.

9 OTHER KEY CHANGES IN THE FSSC VERSION 4.1 Be ready! Additions to the FSSC Additional Requirements, including Formulation of Products, Management of Allergens, Product Labelling, Environmental Monitoring and Logo Use. The use of standardised audit report templates by auditors. Introduction of critical nonconformities, removal of OFls (Opportunities for Improvement). Extension of scope for the Scheme. The scope of the revised version has been expanded to include services like transport and distribution, service and catering as well as retail and wholesale industries. Version 4.1 also promised the addition of a new PRP standard for storage and distribution of food in the near future.
