3 VEGETABLES FOR FRESH MARKET Acreage, Production, and Value, Vegetables, Melons, Mint for Oil, Strawberries Revised Estimates, by Seasonal Groups and States In this publication, the Crop Reporting Board presents revised official estimates of acreage, production, and value of the principal fresh market vegetables, melons, mint for oil, and strawberries by seasonal groups in the major producing States, including Hawaii, for These estimates continue the series published in U. S. Department of Agriculture Statistical Bulletin No. 126, "Commercial Vegetables for Fresh Market--Acreage, Production, and Value, ," and Statistical Bulletin No. 212, "Vegetables for Fresh Market--Acreage, Production, and Value, " Vegetable estimates for relate to total commercial fresh market production of these crops in the States Lncluded. Fresh market vegetable estimates published by USDA for are not necessarily comparable with those for 1939 t~ date. In the earlier period, estimates were confined primarily to well-recognized commercial areas from which substantial quantities were shipped--usually by rail--to distant terminal markets. In many States, local market or market garden areas near large population centers were excluded from these estimates, making thel series less complete than the series in many States. The term "fresh market" has a dual meaning when it is used in describing vegetable estimates. In a strict sense, it applies to the fresh-market proportion of- a group of crops which also have a long history as processing vegetables. This group includes asparagus, snap beans, green lima beans, beets, cabbage for sauerkraut, sweet corn, cucumbers forpickles, green peas, spinach, and tomatoes. The board publishes separate estimates of acreage, production, and value for the quantities of these vegetables grown for sale to commercial processors. The term "fresh market" also describes a group of vegetables and melons which were formerly grown exclusively for sale to consumers in fresh form. In recent years, various quantities of crops such as artichokes, broccoli, brussels sprouts, carrots, cauliflower, celery, garlic, kale, onions, and green peppers have ~een used for processing and this production is included in the USDA's "fresh market" estimates. These commodities are not included in the board's estimates ofprocessing vegetables because it is not practical to determine processors' purchases until the end of the harvest season. Since such a large proportion of these vegetables is purchased on the open market, it is more practical to estimate total production before and during the harvest season. Utilization estimates for these crops have not been published. Cauliflower estimates have previously been carried on the basis of head trimmed slightly for packing in a pony crate. In recent years, there has been a trend toward a close trim (prepackaging). Because of this trend, board estimates have been placed in terms of the close trim. The conversions to the new basis have been carried back to 1954 and are published in this 3

4 bulletin. Heads trimmed for a pony crate average 2.96 pounds per head. A head trimmed for prepackaging averages 1.62 pounds. Production estimates before 1954 may be converted to a comparable basis by multiplying by Prices for these years can be converted by multiplying by The seasonal nature of production and the perishability of vegetables and melons created a need for information on supplies available during specific periods of the year to facilitate orderly marketing. Vegetable and melon estimates for 27 principal crops are classified by States according to the season or period within the season when the bulk of each crop is usually harvested. Forecasts and estimates of acreage and production provide a measure of supplies available inspecific seasonal periods. The seasonal groupings used are as follows: SEASONAL GROUPS AND SUBGROUPS USED FOR VEGETABLE AND MELON CROPS (Dates refer to period of most active harvest) Classifications most commonly used January, February, March Spring: April, May, June Early spring: April 1-May 15 Late spring: May 16-June 30 Summer: July, August, September Early summer: July 1-August 15 Late summer: August 16-September 30 Fall: October, November, December Early fall: October 1-November 15 Late fall: November 16-December 31 Classifications used for certain short-season crops Early spring: Mid spring: Late spring: April May June Early summer: July Midspring: August Late summer: September The seasonal patterns of harvest in all States do not correspond exactly to the period designated. There is overlapping in the marketing seasons for individual crops, and weather frequently disturbs normal harvesting schedules. Consequently, the classifications employed are frequently less precise than the dates indicate. Estimates in this publication are based primarily on information and data secured by State agricultural statisticians from thousands of growers and others associated with the production and marketing of vegetables and related crops. Data secured from other public agencies on the acreage, movement, and sale of these crops are also used. At 5-year intervals, the Bureau of the Census takes its census of agriculture and these data are considered in establishing acreage levels in a census year. Estimates for have recently been reviewed, using census acreage data and other material which has become available since the original estimates were prepared and revisions of individual estimates have been made where necessary. Detailed estimates of acreage, production, and value of 27 crops grown in principal producing States shown on succeeding pages and included in the regular reports issued by the Department, provide basic statistics for about 82 percent of the national commercial production of the vegetables and melons grown primarily for fresh market sale. Estimates of total commercial vegetable and melon production for the United States are included in the appendix of this report. 4
