4 1.0 INTRODUCTION The 370BS slicer is a robust machine specifically designed for bacon and cooked meats. The slicer can be operated in either semi-automatic or manual modes. A stand is available as an option. The slice thickness is adjustable from wafer thin 0.5mm up to 8mm. Page 4

6 2.0 SAFETY 2.1 CE version safety features The rear knife guard is fitted with an interlock to prevent machine starting if not fitted. A complete ring around the edge of the knife provides operator safety during cleaning. A manually operated mechanical interlock on the thickness plate prevents the thickness plate opening during cleaning and also prevents the machine from being started. NVR (No Volt Release) ensures that the machine does not accidentally switch on. A white light indicates when the machine is running and provides a warning for the operator. 2.2 Products that can and can t be sliced The following products can be cut on the RM-A375CE; Bacon, cooked meats, cheese, sausage, salami and bread. The following products can not be cut on the RM-A375CE; Non food products Foodstuffs with bones Frozen products 2.3 General Safety WARNINGS! Ensure the machine is turned off when not in use Ensure the machine is unplugged from the power source before proceeding with any cleaning or maintenance The blade guard ring does not completely eliminate risks in the sharpening area therefore when cleaning and sharpening the blade be very careful and concentrate on the job The machine must be on a solid level surface Guards must always be in place before plugging in and turning on the machine Always use the meat clamp or last slice device and not your hand Do not use a water jet or steam hose Keep hands, arms hair and loose clothing clear of all moving parts Only use attachments supplied Always manually operate the interlock for the thickness plate before cleaning. 8 3.1 INSTALLATION Only the supplier s representative or another authorised and trained engineer should carry out installation. An authorised service engineer should carry out breakdowns. Before connecting the slicer check that the mains supply is 230Volts, 50 Hz single phase. Damage to the slicer will be caused by connection to another main voltage. 1. Ensure that the surface that the machine is to be mounted on is level, of an adequate size and is stable for when the machine is in automatic mode. 2. Ensure that the size of the working area is adequate for the safe operation and cleaning of the machine 3. Position the machine so that the mains cable when connected to the mains socket does not present a tripping hazard, or cause damage to the mains cable. 4. Fit the last slice device (*see below) and meat table extension plate (clips over the end of the meat table) to the machine 5. Ensure that all guards and covers are fitted correctly to the machine 6. Connect the mains plug to the mains socket and ensure the machine operates in accordance to the operating instructions within this instruction document *Place the L.S.D on the meat table between the meat clamp and the meat table, engaging the two spikes into the bottom of the L.S.D. Lower the meat press firmly onto the top of the L.S.D, therefore clamping it into position 3.2 OPERATING INSTRUCTIONS Loading the product WARNING : Check that the slicer is switched off and the safety plate closed before starting to load product. WARNING : Ensure that all guards, covers and accessories (including last slice device and meat table extension are correctly fitted to the machine before use 1. By means of the flywheel move the meat table to its home position at the front of the machine (if not already in that position). 2. Lift the meat clamp by squeezing the crossbar grip and slide it upwards, then grip the clamp lever and lift upwards. Page 8

9 3. Using the meat table carriage release lever move the meat table away from the safety plate sufficiently to load the product. 4. Place the product onto the meat table, positioning it against the safety plate and ensuring that the pin table carriage is under the product. 5. Lower the meat clamp firmly onto the product, position using the crossbar and clamp using the clamp lever Slicing operation A. MANUAL OPERATION 1. Set the slice thickness by rotating the index knob to the required indication number [0 16] 2. Check to ensure that the meat carriage drive is not engaged (lever to the right of the on / off switches 3. Start the machine by pressing the On button: : The knife will revolve. : The safety plate will automatically open, (see cleaning instructions for operation of manual locking device) 4. Using the handle rotate the flywheel which will drive the meat table backwards & forwards across the knife. 5. Continue slicing until the required number of slices is obtained or the product needs to be reset on the meat table. 6. Stop the machine (knife drive) by pressing the Stop button. 7. To reset the product on the meat table* : a) Ensure that the machine is switched off & the safety plate is closed b) Ensure that the meat table is in its home position c) Using the meat carriage release lever, move the meat table away from the safety plate. d) Lift the meat clamp from the product. e) Re-position the product and pull down the clamp onto the product. 8. Commence slicing as A3 above. *The meat clamp can also be used as a pusher (when the last slice device is fitted [LSD]); the meat can be positioned in front of the pusher and the lever on the LSD rotated to grip the meat product, the machine can then be operated as above. 10 USEFUL HINT. The meat table may be moved by means of the carriage release lever OR the Fine Adjustment control (under the end of the meat carriage; right hand side) AUTOMATIC OPERATION B. AUTOMATIC OPERATION. WARNING : The machine must never be used in automatic mode with the flywheel handle fitted WARNING : Under no circumstances must the slicer be used without the product table supplied being in place. To do so is both illegal and dangerous. 1. Unscrew the flywheel handle retaining screw and remove the handle from the machine 2. Set the slice thickness and start the machine (A1, A2 and A3 on proceeding page ) 3. Engage the clutch by turning down the black lever to the right of the on/off switches. 4. The meat table will smoothly engage and travel backwards & forwards across the knife 5. Slices can be manually collected & stacked on the receiving tray. 6. To stop* and/or re-position the product see A6 & A7 above. *The table drive (clutch) should be disengaged before stopping the machine unless in an emergency situation Cleaning WARNING : Ensure that the machine is disconnected from the electrical supply and that the safety plate is fully closed. WARNING : Do not allow yourself to be distracted at any time whilst cleaning or using the slicer. WARNING : Do not use a dishwasher to clean parts from this slicer Page 10

11 IMPORTANT. Corrosive and caustic detergents, abrasive and metallic materials should not be used to clean the machine. The machine should not be hosed down or steam cleaned. 1. Lock the safety plate by turning the locking knob, on the left side of the machine, to the down position [ 6 o clock ] 2. Remove the L.S.D, if fitted, by raising the meat clamp (see operating instructions) 3. Remove the meat table extension plate (unclip) and remove the meat table assembly by releasing the locating knob between the clamp supports. 4. Remove knife cover fitted to the rear of the knife. 5. Remove the drip tray from under the knife. 6. Release the slice deflector away from the knife. 7. Wipe away all debris from the meat table, receiving tray, sharpener and main body of the machine 8. Remove the receiving tray (pull the retaining clip outwards ) 9. All the items removed from the slicer should be washed in hot water 10. Always clean the knife with a damp cloth, working from the centre to the edge of the knife. Protective gloves should, if available, be worn while cleaning the knife. In any case use extreme care when performing this operation. 11. Check that there is no residue built up in the solenoid housing, if there is, remove the clear plastic cover by unscrewing the two thumbscrews, then by using the smaller brush, thoroughly clean away all debris. Replace the plastic cover and secure by fitting the thumbscrews. Provision has been made for residue to fall through the machine onto its supporting table, the surface of the table should be checked and periodically cleaned. 12a) Place the remover over the knife and line up the two thumb screws with the holes in the knife. Caution: Ensure the knife remover is under the top knife guard. WARNING : The Knife and remover are heavy. b) Fully tighten the two thumb screws into the knife holes c) Remove the knife bolt using an 8mm Hexagon Key (supplied) Page 11

12 d) Lift the remover complete with knife clear of the machine e) The rear of the knife can now be safely cleaned and should be dry before refitting (Always clean knife from the centre outwards) 13. Using a damp bulbous cloth and the brush provided, completely clean down the machine. Particular attention must be given to cleaning around the knife box using the brush to remove debris. Do not use excessive water during cleaning. (The items removed from the machine can be washed in a sink.) 14. Clean the sharpener assembly & stones using a brush. On no account should the sharpener be immersed in water. 15. Refit the remover complete with the knife onto the knife drive, replace and tighten the knife bolt. Completely unscrew the two thumbscrews and lift the remover clear of the machine 16. Complete the re-assembly of the machine 17. Unlock the safety plate lock by turning the knob, (on the left side of the machine) Knife Sharpening IMPORTANT : Ensure that all parts of the machine are dry before re-assembly and sharpening WARNING : Ensure that the table drive (clutch) is disengaged and the thickness is set at zero, before starting the sharpening operation 1. Lift the sharpener unit by the knob, twist through 180 degrees and lower onto the knife. (The sharpening & honing stones will be positioned on either side of the knife). 2. Connect the electrical supply and start the knife by pushing the green On Button. 3. Push the lever on the front of the sharpener housing to the sharpening position for 7 seconds; push the lever to the honing position for 3 seconds and release. 4. Stop the knife by pressing the Stop button. 5. Disconnect the electrical supply 6. Return the sharpener unit to its original position. 7. Lock the safety plate 8. Open the slice deflector Page 12

13 9. Clean the sharpener dust from both sides of the knife with a damp cloth; always work from the centre of the knife towards the knife edge 10. Close the deflector 11. Clean the sharpening dust from off the rest of the machine it may be necessary to remove the knife to do this! Lubrication 1. Only use Avery Berkel lubricating oil products. 2. Lubricate the meat press slide bars after cleaning daily. 3. Lubricate the sharpening stones regularly (Monthly). Page 13

Blade 18. Blade guard 19. Hand wheel 5.4 MAINTENANCE All maintenance operations must only be carried out with the machine disconnected and isolated from the mains supply. Protective gloves should be worn where necessary. Periodically check all mechanical / electrical parts and the mains cable for any signs of damage and change if necessary. Page 22

23 5.4.1 Adjusting the motor clutch Figure 1. If the table does not move smoothly during automatic operation then the clutch may require adjustment. To adjust proceed as follows; Refer to Figure 1. Remove the collecting tray Loosen the clamp tightening screw (2) Now by turning nut (3) clockwise the clutch is tightened. By turning anti clockwise then the clutch is loosened Once the correct adjustment is achieved re-tighten screw (2). Page 23

24 5.4.2 Adjusting the bevel gear pair Figure 2 If there is too much slack between the turning of the fly wheel and movement of the table then the bevel gears will need to be adjusted. Proceed as follows; Refer to Figure 2. Remove the cover (4), but be careful not to damage the paint. Tighten the nut (27mm ring spanner or socket required) (5) until the slack is eliminated. Replace cover (4) Page 24

Refer to Figure 3 Put a few drops of slicer oil in to hole (5) on the table (6) Place a few drops of oil onto and along the carriage slide bar (7) turn the fly wheel a few times. Apply a small amount of food safe grease to the table slide rail (8) Page 25
