3 FoodTools Inc, OPERATIONS MANUAL: MODEL CS8 INTRODUCTION Note: SPECIFICATIONS The CS-8 Cake Slabber has been designed for high speed slabbing of cakes and other food products. It has been designed for continuous light duty usage in the bakery environment. Because of our positively tensioned, high speed, oscillating blade, a wide variety of products, even frozen products, can be sliced. Special product hold-down rollers help to guide the product through the slicing blade for clean and consistent slicing. Operation of the machine is simple and easy. Blade height is easily adjusted with a single hand crank. The conveyor speed and blade motors are all independently controlled. This enables the machine to slice a wide variety of products at various temperatures. We do not recommend water wash-down or steam cleaning of the motors and bearings. This will shorten the life of these components. Water damage will not be covered by FoodTools warranty. Page 2
4 FoodTools Inc, OPERATIONS MANUAL: MODEL CS8 Electrical Requirements: Capacities: SAFETY WARNINGS WARNING: WARNING: WARNING: WARNING: CAUTION : CAUTION : CAUTION : SETUP & OPERATION INSTRUCTIONS Model CS-8 Econo Slabber: 120/220 VAC, 5 amps Blade cutting height:.5 to 3.5 Maximum product width: 18 The model CS-8 Slabber has been designed with safety in mind, but as with all machinery, it is important to follow some basic safety rules. Please have all personnel that will be operating this machine read and follow these safety guidelines. Turn off, and lock out, the main power disconnect switch before removing the holddown roller/guard assemblies, or when cleaning or servicing machine. Never operate this machine without the hold down roller/guard assemblies in place. Never reach into the machine while in operation. If a product gets stuck or jammed in the machine, always turn off the main power disconnect switch before attempting to clear the machine. Be very careful when cleaning or servicing near the slicing blade. The blade is very sharp, and even slight contact can cause cuts. SHOCK HAZARD. Always connect this machine to a properly grounded electrical outlet. Electrical components on this machine should be serviced by qualified personnel only. Never open the electrical box when the machine is plugged into an electrical outlet. Page 3
5 FoodTools Inc, OPERATIONS MANUAL: MODEL CS8 Machine Location Blade Height Adjustment Hold-Down Roller Height Adjustment NOTE: Conveyor Speed Adjustment Blade Speed Adjustment CLEANING Locate the machine on a level surface. If all the caster wheels do not contact the floor, block or shim the wheels as needed. Lock casters to keep machine from moving during operation. The blade height is controlled by adjusting the slicing head of the machine up or down. To adjust the blade height: 1. Loosen the two lock down knobs located on each side of the machine. 2. Turn the adjustment handle at the bottom of the slicing head. An adjustment scale is located on the side of the machine to help set height correctly. The scale reads the approximate distance from the conveyor belt to the blade. 3. Once blade height has been set, retighten the two lock down knobs. The CS-8 comes standard with one hold down roller. The guard with the hold down roller should be placed in the front guard position. The the hold-down roller is used to help hold and guide the product through the slicing blade. On some products with very sticky top surfaces, it may be necessary to adjust the hold-down rollers up so they do not touch the top of the product, or place a piece of parchment paper on top of the product before slicing. Some products may require the optional hold-down roller in the rear guard position. To adjust the Roller Height: 1. Loosen the adjustment locking knob, then turn the adjustment knob. Turning the knob clockwise will raise the roller, and turning counter clockwise will lower the roller. The hold-down roller should be adjusted approximately 1/4 to 1/2 lower than the product height. 2. Once the height has been set, retighten the locking knob. The hold-down rollers are not required for all products, and can actually cause problems on certain products. An example of a product which would not require any contact with the hold-down rollers is a warm sponge cake. Located on the electrical box front panel is the conveyor speed control adjustment knob. This controls how fast the conveyor carries the product through the slabber blade. Setting the conveyor speed will depend on the type, density and temperature of the product being sliced. It is a good idea to start out slicing a product at a slow conveyor speed, and gradually increase the speed. If you notice that the product is slipping on the conveyor belt when it contacts the slicing blade, the conveyor is probably set too fast, or the product is too cold. If the product is too cold, allow it to warm for a short time before slicing. Also located on the electrical box front panel, is the blade speed adjustment knob. This adjustment controls the speed of the blade drive motor. Some experimentation may be needed to find the right blade speed for your product consistency and temperature. There are three speed position settings. Cleaning the Hold-Down Page 4
6 FoodTools Inc, OPERATIONS MANUAL: MODEL CS8 Roller/Guard Assemblies General Machine Cleaning CAUTION: Note: Cleaning Conveyor Pulleys Belt Scraper Cleaning MAINTENANCE AND SERVICE Conveyor Belt Tension and Tracking Adjustment Conveyor Belt Removal First make sure to turn the main power disconnect switch OFF or completely disconnect the machine from the power outlet. To remove the guard simply lift it off of the machine. Clean the rollers and guards with a wet cloth and mild cleaning solution. We do not recommend sink washing because the roller assemblies may trap water. Water wash-down or steam cleaning is not recommended because it can shorten the life of the bearings and motors. We recommend cleaning all the machine surfaces with a wet cloth and mild cleanser. Avoid spraying directly at the drive motors, bearings and drive chain. Follow the lubrication instructions in this manual after wash-down. Water damage will not be covered by FoodTools warranty. The conveyor belt has a self cleaning plastic scraper that should normally keep the underside of the belt and conveyor pulleys clean, but over time, there may be some build up on these pulleys. To clean the pulleys: 1. Release the conveyor belt tension and remove the conveyor belt by pulling out the pin in the alligator splice. 2. Clean the pulleys with a damp cloth or use a wooden or plastic scraper. Do not use a metal scraper, it could scratch the finish on the aluminum pulley drum. To clean the belt scrapers first release the conveyor belt tention. Next unscrew the black plastic knobs located at each end of the scrapers. Remove the scraper from the machine to clean. Reinstall the scrapers before tensioning the belt. The CS-8 Slabber has been designed for long life and low maintenance operation. The following points will highlight the few areas that should be checked on a regular basis. The conveyor belt is equiped with an automatic tensioning system. If the belt wanders to one side it could mean that the rollers need to be cleaned. (See Cleaning Conveyor Pulleys ) It could also mean that one of the spring tensioners is defective. To remove the Conveyor Belt: 1. Rotate the belt tension release lever (see Figure 7, Page 10) 2. Move the belt around until you see the stainless steel lacing seam. 3. Pull the lacing pin out of the seam to separate the belt. Fastener Tightness Page 5
7 FoodTools Inc, OPERATIONS MANUAL: MODEL CS8 Under normal circumstances, the machine fasteners should not come loose. If excessive vibration or noise is coming from the machine, turn off the main power disconnect and check the tightness of the fasteners. Conveyor Chain Lubrication Blade Tensioning Note: Changing Slicing Blade Under normal usage, the drive chain should be oiled on a yearly basis. However, if water washdown is used, more frequent lubrication will be needed. To lubricate the chain: 1. Turn off the main power switch. 2. Remove the chain cover. 3. Use a penetrating roller chain lubricant on all chain surfaces. 4. Replace the chain cover and tighten the fasteners. The blade tension is controlled by the blade tension lock nuts. To change the tension, first loosen the outer lock nut; to increase blade tension tighten the inner lock nut, to decrease blade tension, loosen the inner lock nut. The blade tension will affect the harmonics of the blade mechanism. The tension should be adjusted so that the blade does not vibrate up and down when operating. Under normal usage and when adjusted correctly you should get months or even years of usage out of your slicing blade. The tension on the blade is very important to the overall operation of the machine. A blade that is too loose could cause uneven cuts or ineffective cutting action. A blade that is too tight can cause premature blade breakage and also put unnecessary stress on the blade tension arms and bearings. To change the blade: 1. Make sure to turn the main power disconnect switch OFF and completely disconnect the machine from the power outlet. 2. Remove the guards from the machine. 3. Unscrew the lock nuts on the blade tensioner until the blade goes slack. 4. Remove the screws holding the ends of the blade. 5. Replace the blade and tighten the blade tensioner lock nuts. (see Blade Tensioning above) Page 6

14 FoodTools Inc, OPERATIONS MANUAL: MODEL CS8 LIMITED WARRANTY FoodTools, Inc. warrants to and for the sole benefit of the original purchaser of the equipment, that such equipment is free from defects in material and workmanship under normal and proper use, operation and maintenance. This warranty shall remain in effect for a period of one year after delivery of the equipment to the original purchaser. Notice of any claimed defect must be promptly given by the original purchaser to FoodTools, Inc. and the claimed defective part or the equipment returned to FoodTools, Inc. prepaid. Notice must further include consent to FoodTools, Inc. to inspect the equipment or part to determine that it is defective and that it has only been subject to ordinary use and service. If a valid warranty claim is made during the above warranty period, FoodTools shall provide the parts required to repair or replace as FoodTools, Inc. shall elect, the defective part or the equipment. The installation and freight cost of the replacement parts or equipment shall be at the expense of the owner. This warranty does not cover damage through accident or misuse. FoodTools, INC.
