5 Safety The Henny Penny Heated Holding Cabinet has many safety features incorporated. However, the only way to ensure safe operation is to fully understand the proper installation, operation, and maintenance procedures. The instructions in this manual have been prepared to aid you in learning the proper procedures. Where information is of particular importance or is safety related, the words DANGER, WARNING, CAUTION, or NOTICE are used. Their usage is described as follows: DANGER! indicates hazardous situation which, if not avoided, will result in death or serious injury. WARNING! indicates hazardous situation which, if not avoided, could result in death or serious injury. CAUTION! indicates hazardous situation which, if not avoided, could result in moderate or minor injury. NOTICE NOTE: NOTICE is used for information considered important regarding property damage. 7 Chapter 1 Troubleshooting 1.1 Introduction This section provides troubleshooting information in the form of an easy to read table. If a problem occurs during the first operation of a new fryer, recheck the Installation section of the Operator s manual. Before troubleshooting, always recheck the Operation section of the Operator s manual. 1.2 Testing Instruments You may use two test instruments to check the electrical components: 1. A voltmeter 2. An ohmmeter NOTE: When the manual refers to the circuit being closed, the ohmmeter should read zero unless otherwise noted. When the manual refers to the circuit being open, the ohmmeter will read infinite resistance. 1.3 Troubleshooting To isolate a malfunction, proceed as follows: 1) Clearly define the problem (or symptom) and when it occurs. 2) Locate the problem in Table 1-1 Troubleshooting, page 1. 3) Review all possible causes. Then, one-at-a-time work through the list of corrections until the problem is solved. If maintenance procedures are not followed correctly, injuries and/or property damage could result. NOTE: Refer to the maintenance procedures in to safely and properly make the checkout and repair needed. Table 1-1 Troubleshooting Problem Cause Correction With power switch in power position, unit is completely inoperative. Open circuit. Check to see that unit is plugged in. Check breaker or fuse at supply box. Check voltage at wall receptacle. Check power switch; replace if defective. Check internal component connectors, and the cord and plug, for loose connections 1Troubleshooting

8 Problem Cause Correction Transformer defective. Control board defective. Check input and output voltage; replace if defective. Check for 12 volt input from transformer; if control board shows 12 volts, replace control board. A. Product not holding temperature. B. Cabinet steaming - product becoming soggy. Doors are left open. Temperature set too low. Gasket torn or worn. Heater not working. Blower not working. Product held too long. Low or improper voltage. Too much humidity inside the cabinet. Holding product too long Operation Keep doors closed except to load and unload product. Increase temperature per instruction in Operator s manual. Replace gasket. Check heater; replace heater if necessary. Check blower; replace blower if necessary. Hold product only for recommended time. Using meter, compare receptacle voltage to data plate voltage. Empty water from the water pan. Hold product for recommended time. C. Product dry. No water in pan. Remove pan and put in approximately 1 inch of hot water. Heating System Troubleshooting A. Unit will not heat. Faulty control. Faulty high limit. Faulty heater. Faulty wiring. Change control PCB if needed. Check high limti and replace if needed. Check heater and replace if needed. Check wiring for loose connections or broken wires and repair as necessary. 2

9 Problem Cause Correction B. unit will not heat to desired temperature C. Unit overheating. Faulty blower. Display not indicating true temperature. One of heaters defective. Doors being left open too much. Gaskets torn or worn. Defective high limit on one of heaters. Faulty control. Faulty blower. Check blower and replace if needed. Check probe calibration and change calibration or offset if necessary. Check heater and replace as necessary. Pnly open doors as necessary. Replace gasket. Check high limit and replace if necessary. Replace control PCB if needed. Check blowers and replace if necessary. 1.4 Error Codes In the event of a control system failure, the digital display shows an error message. These messages are code: E04, E05, E06, E41. A constant tone is heard when an error code is displayed, and to silence this tone, press any of the product buttons. Table 1-2 Error Codes Display Cause Panel Board Correction E-4 E-5 E-6 Control board overheating. Unit overheating; faulty relay or control board. Faulty temperature probe. Turn unit off, then back on; if display still shows E-4, the board is getting too hot; check for signs of overheating behind the control panel; once panel cools down the controls should return to normal; if E-4 persists, replace the control. If control board does not cut power to relay when the LED is green, replace control board; but if control board does cut power to relay when the LED is green, but unit continues to heat, check relay. Turn unit off, then back on; if E-6 still shows, have temperature probe checked. 3Troubleshooting

10 Display Cause Panel Board Correction E41 Memory scrambled. Turn unit off, then back on; if E-41 still shows. have the controls initialized; if E-41 persists, replace control board. E-50 RAM failure. Turn unit off, then back on; if E-50 persists, replace control board. E-51 NOVRAM failure. Turn unit off, then back on; if E-51 persists, replace control board. E-53 EPROM failure. Turn unit off, then back on; if E-53 persists, replace control board. Troubleshooting 4

11 Chapter 2 Parts 2.1 Introduction This section lists the replaceable parts of the Henny Penny HHC-901 and HHC-904 units. 2.2 Genuine Parts Use only genuine Henny Penny parts in your fryer. Using a part of lesser quality or substitute design may result in damage to the unit or personal injury. 2.3 When Ordering Parts Once the parts that you want to order have been found in the parts list, write down the following information: Example: Item Number 8 Part Number Description STOP - DOOR From the data plate, list the following information: Example: Product Number HHC901.0 Serial Number Voltage AW0011E 120 Volt 2.4 Prices Your distributor has a price parts list and will be glad to inform you of the cost of your parts order. 2.5 Delivery Commonly replaced items are stocked by your distributor and will be sent out when your order is received. Other parts will be ordered, by your distributor, from Henny Penny Corporation. Normally, these will be sent to your distributor within three working days. 2.6 Warranty All replacement parts (except lamps and fuses) are warranted for 90 days against manufacturing defects and workmanship. If damage occurs during shipping, notify the carrier at once so that a claim may be properly filed. Refer to warranty for other rights and limitations. 5Parts

12 2.7 Recommended Spare Parts For Distributors Recommended replacement parts are indicated with a in the parts lists. Please use care when ordering recommended parts, because all voltages and variations are marked. Distributors should order parts based upon common voltages and equipment sold in their territory.
