7 Safety Henny Penny fryers have many safety features incorporated. However, the only way to ensure safe operation is to fully understand the proper installation, operation, and maintenance procedures. The instructions in this manual have been prepared to aid you in learning the proper procedures. Where information is of particular importance or is safety related, the words DANGER, WARNING, CAUTION, or NOTICE are used. Their usage is described as follows: DANGER! indicates hazardous situation which, if not avoided, will result in death or serious injury. DANGER! WARNING! indicates hazardous situation which, if not avoided, could result in death or serious injury. WARNING! CAUTION! indicates hazardous situation which, if not avoided, could result in moderate or minor injury. CAUTION! NOTICE NOTICE is used for information considered important regarding property damage. 9 Chapter 1 Introduction 1.1 Theory of Operation Due to the complex nature of the Oil Quality Monitor (OQM) product a thorough understanding of how the product works and interacts is required for optimal results OQM Basics Information Gathering The Oil Quality Management (OQM) system uses a combination of additional OQM hardware and software in conjunction with the fryer's standard filter and disposal hardware and software to monitor oil quality. Understanding how each of these systems interact with each other determines how the OQM software is configured. Whether the OQM hardware and software are installed in the factory or onsite, the Service Technician or Operator performing the on-site fryer installation must configure the OQM software properly for the system to work accurately. To properly configure OQM, installers must do the following: Determine and note if any vats are excluded from using OQM. Determine and note if a vat is only filtered once a day. Determine and note the disposal type used for each vat that is configured for OQM Configuring OQM Each vat must be configured independently based on the disposal method used for each vat. As an example, vat number 4 is used for frying fish and the oil disposal method is different to prevent cross contamination of oil in vats 1 through 3. Because vat 4 uses a different disposal method than vat 1 through 3, vat 4 OQM software must be configured differently to ensure the proper Total Polar Material (TPM) is credited to that vat. Notice the dispose setting differences and when the dispose is credited. NO/VAC: Used on cart and vacuum systems (i.e. McDonald s France), gives credit for dispose when oil is drained into drain pan. RTI: Fryer has secondary RTI switch installed. Drains oil to pan, disposal credit is granted once fryer filter pump evacuates the old oil from the fryer. REAR: Disposal connection in rear of fryer. Drains oil to pan, disposal credit is granted once fryer filter pump evacuates the old oil from the fryer. FRONT: Disposal connection in front of fryer. Drains oil to pan, disposal credit is granted once fryer filter pump evacuates the old oil from the fryer TPM Basics Filtering Total Polar Material (TPM) is the measurement of the breakdown of the fryer's oil. A low reading (1-10) means the oil is good, while a high reading (20 and above) indicates the oil is breaking down. The oil sample used to calculate the TPM is obtained during a quick (auto) filter or daily (maintenance) filter cycle. This means the TPM for each vat is directly credited by how many times a day an operator filters the oil for each vat. This means the quick (auto) filters are more accurate than the daily (maintenance) filters. To obtain the most accurate sensor reading the oil must be at set point temperature. Introduction 1

10 Oil Tracking All the oil from all the vats are sampled by a single sensor, which is located after the outlet of the filter pump. The oil is sampled on its way back to the vat from the drain pan through the filter pump. However, each vat's oil tracking process is calculated individually by vat, and not collectively. Each vat has its own independently calculated TPM valve. An accurate TPM reading requires an accurate oil tracking process Median Calculation The OQM software uses a median reading based on the last three samples. While an operator may filter 10 times in one day, only the last three samples are retained in the display and used for calculation. This helps to eliminate false readings. As an example, if the last three readings are 6, 22, 7 the TPM value is 7, which is the median value. The rule for median is to pick the middle value. Median is not the same as average. The order of the readings or how they display does not matter, the median (middle) value is exclusively used. As an example, the median is 7 for the following sequences: 7,7,8 7,8,7 8,7, Water Contamination Water can effect a TPM reading. Often there is water at the bottom of a vat. If water releases from a product and then doesn t get boiled off, it sinks to the bottom of the vat. Also, sometimes after cleaning there's left over water in the drain pan. Since oil floats on water, it s very hard to get the water back up to the top of the vat to be boiled off. Because of water, OQM can sample a high value for one of the filters. As an example: Introduction 15, 8, 7 TPM is: 8 9, 15, 8 TPM is: 9 9, 9, 15 TPM is: 9 Notice how the water readings (15) did not skew the TPM result because we use the median value. In cases where a reading doesn t display after a filtration or looks incorrect, an additional filtering resolves the issue TPM History and Oil Tracking Issues Oil Disposal and Tracking When the oil is disposed of, the OQM software clears (deletes) the sample history and the sampling (oil tracking) process starts over. The very first sample (reading) taken after the dispose, populates all three values in the history display. As an example, if 7 is the first sample reading after the dispose, then 7, 7, 7 populates the history display. At this time the TPM is 7. After more filters the last three samplings change to 9, 8, 7. The TPM is now 8. This process continues until the next dispose. However, if the dispose is not credited because the vat is improperly configured, the history array is not reset, and the system winds up with readings like 23, 24, 7. Since OQM chooses the median value and the dispose was not credited, the user gets CHANGE OIL SOON 23% on the next reading. 2

11 Dispose Vacuum System Often, on a dispose vacuum system, the spigot that is attached to the vacuum system is routed to the front of the fryer. The installer sets the Dispose setting to FRONT. It should be set to NO/VAC. The FRONT setting requires that the fryer's oil pump run for x amount of time to give credit for the dispose. However, that never happens because they hook their vacuum to the front spigot and dispose independently of the OQM system requirements. The fryer's control does not recognize a dispose has occurred and so it doesn t give OQM credit. Additionally the OQM system does not reset its parameters because to OQM a dispose has not occurred. On the next filtration cycle the OQM system is still latched in the you need to dispose mode. So, messages like CHANGE OIL WHEN POSSIBLE 24% display when the last oil TPM reading was 7.5% (new oil) Testo Manual Oil Reader Sometimes operators compare TPM readings to a Testo manual oil reader and notice a discrepancy. This is typically caused when the TPM readings, manually documented on a sheet of paper, are old. Depending on the filtration practice for a given vat, the reading could be more than 24 hours old. Refer to Check the TPM, page 7 for the TPM date and time to obtain a relevant comparison. Introduction 3

INFO: The software file name may have a letter at the end designating version. 2.3 Disposal Settings Setup each vat s control board individually to enable the OQM system and to select the appropriate disposal setting for each vat. As an example, if one of the vats is used to fry fish, and a disposal cart is used to dump the oil directly from the vat instead of using the onboard filter pump, which can cause cross contamination of oil in other vats from residue left behind in the pump and pipes, then use the NO/VAC setting for that vat only. The other vats, which use a different disposal method, would use a different disposal setting. Disposal settings are as follows: NO/VAC: Used on cart and vacuum systems (i.e. McDonald s France), gives credit for dispose when oil is drained into drain pan. Installation 5

14 RTI: Fryer has secondary RTI switch installed. Drains oil to pan, disposal credit is granted once fryer filter pump evacuates the old oil from the fryer. Drains oil to pan, disposal credit is granted once fryer filter pump evacuates the old oil from the fryer Access Disposal Settings in Setup Mode INFO: *SETUP* *MODE* displays if the control has been factory initialized and then the panel power is turned on. 1) Press the down-arrow button until BULK OIL DISPOSE - 1. NO/VAC, 2. RTI, 3. REAR, 4. FRONT displays. 2) Use the left and right-arrow buttons to select a dispose setting. 3) Press the X button twice to exit the menu, and then return to normal operation Access Disposal Settings 1) Press and hold the TEMP and I (Info) buttons until LEVEL - 1 displays, followed by ENTER CODE. 2) Type 1,2,3,4. PRODUCT AND SELECTN displays. 3) Press the down-arrow button until BULK OIL DISPOSE - 1. NO/VAC, 2. RTI, 3. REAR, 4. FRONT displays. 4) Use the left and right-arrow buttons to select a dispose setting. 5) Press the X button twice to exit the menu, and then return to normal operation. Installation 6

15 Chapter 3 Operation 3.1 Operation Overview The OQM system gauges the degradation of frying oil by measuring the amount of Total Polar Material (TPM) present in the oil. The amount of TPM in the oil is measured when the oil is returned to the vat during a quick (auto) filter or daily (maintenance) filter cycle. The associated TPM value is then recorded by each individual vat s control board Check the TPM To check the TPM value of each vat during the last filter cycle press the I (Info) button. The TPM value displays followed by the date and time of the last sample. INFO: The oil quality sensor life check is only available from control board number one on the far left TPM Prompts INFO: The following prompts use the control board default settings. These settings can be changed by accessing Special Programming. Refer to the Operation Manual for further instructions. The following control board display prompts are related to the TPM rating of the oil. WARNING: TPM levels are approaching dispose limit. DISPOSE: TPM levels are high and oil needs disposed as soon as possible. CHANGE OIL SOON: Is displayed after each filter cycle when a vat s oil reaches a TPM level between 20 to 23.9 percent. The purpose of the message is to alert the operator that the TPM is nearing the disposal threshold. Refer to the Operation Manual to change this setting, denoted as WARN TPM and with a default of 20. CHANGE OIL WHEN POSSIBLE: Is displayed after each filter cycle or every 30 minutes without a filter cycle, if a vat s oil reaches a TPM greater than 24 percent. The purpose of the message is to alert the operator that the oil has reached the disposal threshold. The message continues to display until the oil disposal process is completed. Refer to the Operation Manual to change this setting, denoted as MAX TPM and with a default of 24. Press YES to acknowledge the message TPM Exceptions Remove Water Step During Filtration A remove water step has been added to the maintenance filtration cycle, during the rinse step, if water is present in the vat. There are many possible reasons for excessive water in the vat: Drain pan cleaning and washing leaves water behind in drain pan. Frozen product with excessive ice crystals. Many cook cycles before filtration. Vat is used to cook fish or vegatables (Veggi Burgers) and is only filtered once per day. Water settles to the bottom of the vat and doesn't cook off. When the vat is filtered the excessive water skews the TPM reading. Additional filtrations correct the reading: however, if the vat is only filtered once a day the reading remains skewed. To offset this possible Operation 7

16 scenario the fryer cooks off the excessive water during the filtration cycle. The rinse step normally fills up an empty vat with oil, and then drains out the oil once full, to get rid of the crumbs in the vat. The remove water step begins once the vat is full. Once full the oil is heated up to a programmable set point and then held for a programmable amount of time, to cook off the excess water. After the remove water step is performed, the rinse cycle is completed by draining the vat. New programmable settings are: Remove water set point: Special Programming SP-63 MF-RINSE SETPOINT. Default = 325F, Range = F. Remove water hold time: Special Programming SP-64 MF-RINSE SECONDS. Default = 300 seconds, Range = seconds (0-10 minutes). Special Programming SP-65 COOKS UNTIL WATER PRESENT. Default = 18 (split) or 36 (full). Range = Infrequent Filtration For vats designated for cooking products such as fries and nuggets that required frequent filtration cycles throughout the day the control may display TPM VALUE EXPIRED, PLEASE FILTER VAT. This occurs if more than 4 hours (default) have elapsed since the last filter cycle. Run a quick (auto) filter or daily (maintenance) filter to obtain a more current TPM value. Special Programming SP-66 TPM EXPIRATION TIME. Default = 4 hours, Range = 4-12 hours Once Daily Filtrations For vats only filtered once daily such as fish or veggie burgers the control displays the last value, as long as more than 24 hours have not elapsed since the previous filtration cycle. If more than 24 hours have elapsed, the control displays TPM VALUE EXPIRED, PLEASE FILTER VAT. Run a quick (auto) filter or daily (maintenance) filter to obtain a more current TPM value OQM Report Every Monday, if a USB flash drive is plugged into a control board, a report is generated for the last week of operation. Also, any other day, a report can be requested in two button Info Mode. Circled below is the new reported items for the OQM sensor. 19 Chapter 4 Maintenance The OQM sensor may be hot. Obtain and use PPE during the replacement of the OQM sensor. Failure to do so may cause serious burns. The following information can be accessed at OQM.html. 4.1 View Last TPM Press and release the I (Info) button once. The last TPM reading including date and time stamp displays. 4.2 OQM Sensor The OQM sensor sits inside a canister and is connected in-line with the fryer s disposal system so it can read the oils Total Polar Material (TPM) during filtration cycles. The reading is then used by the OQM software to determine when the oil has reached the end of its usable life, and when it should be disposed of by the operator Calibration INFO: The oil quality sensor life check is only available from control board number one on the far left. The OQM sensor is calibrated for one year of usage based on programmable TPM thresholds, 30 day TPM history, and is replaced annually. The fryer prompts the operator after 11 (11.5, 12) months of use by displaying the message EXCHANGE OQM SENSOR SOON. SEE PM GUIDE on the control board s display. At this point the operator should go to Under Support, select your country of origin, and then use the information provided to contact a support representative to order a new sensor. If the operator does not replace the sensor within 12 months of the first use date then the message EXCHANGE OQM SENSOR NOW. SEE PM GUIDE displays on the control board s display. At this point the sensor is no longer in calibration and the operator should go to Under Support, select your country of origin, and then use the information provided to contact a support representative to order a new sensor Compliance Each country has it s own regulations in regards to the maximum allowable TPM of frying oil. Inspectors visit periodically to verify compliance. Operators can provide calibration information by displaying the sensor s FIRST USE DATE. This date displays as a two digit week and four digit year (e.g ). In this example, it indicates that the sensor was first used in week 3 of year 2017, and also that the calibration is valid until the third week of Checking Sensor Install and Replacement Date Obtain the oil quality sensors install date by doing the following: Maintenance 11

20 INFO: The oil quality sensor life check is only available from control board number one on the far left. 1) On control board one, simultaneously press and release both the F buttons. HP INFO, and then 1 E-LOG display. 2) Press the left-arrow button twice until 17. OIL QUALITY displays. 3) Press the down-arrow button until FIRSTUSE and a date display. 21 Chapter 5 Troubleshooting Verify the fryer is equipped with OQM hardware. If not, ensure the OQM application is disabled. If the OQM software is accidently enabled on units without OQM hardware, error messages display. 5.1 Diagnosing Issues Use the following information to diagnose and correct issues. Table 5-1 Issues and Corrections Issue Cause Correction Control continues to display CHANGE OIL WHEN POSSI- BLE or high TPM value after oil is disposed. Oil dispose not credited due to control dispose setting not matching disposal method. Change the dispose setting to match dispose method, refer to 2.3 Disposal Settings, page 5. Control displays TPM VALUE EXPIRED, PLEASE FILTER VAT when operator checks TPM value. Control displays NEW OIL after disposing oil rather than a TPM value after a dispose. Run a quick (auto) filter or daily (maintenance) filter. No TPM value displayed. OQM system not enabled. Enable OQM system, refer to Chapter 2 Installation, page 5. Three consecutive filters will provide an accurate TPM value. 5.2 Error Codes Use the following information to diagnose and correct issues.
