3 BACKGROUND The momentum of the Beef + Lamb New Zealand Golden Lamb Awards has continued, with the eighth annual competition attracting 150 entries. The competition, which provides a platform to profile New Zealand lamb, has grown from humble beginnings into a very competitive event, with a widely sought after Grand Champion status. The initial 2007 pilot competition, called the Lamb Oscars, was inspired by the beef farmer challenge, Steak of Origin TM. The pilot was open to Lower South Island sheep farmers, using Alliance Group s Mataura plant in Southland for processing. Finalists were chosen on yield results, with a range of attributes judged by a tasting panel at the final at the Upper Clutha A&P Show in Wanaka. This inaugural pilot gave Beef + Lamb New Zealand the opportunity to modify and improve the competition process before taking it nationwide the following year. The event also gained a new name - The Golden Lamb Awards, aka The Glammies - with four classes introduced. In 2009 a retail class was included and today, the Glammies is a must enter event for sheep farmers and meat retailers across New Zealand. COMPETITION OBJECTIVES To romanticise lamb in the same manner achieved by wine competitions; To create enthusiasm amongst sheep breeders and farmers; To generate media hype around lamb; To position lamb as a top-end product; To raise Beef + Lamb New Zealand Ltd s profile; To profile sponsors. KEY PRINCIPLES FOR 2014 To continue growing entry numbers; To ensure a consistent and clear testing process from selection at the plant, through the analysis at Carne Technologies to the tasting at the final. ENTRIES The competition attracted 149 entries comprising: Class 1: Best of Breed: Traditional - 13 entries Class 2: Best of Breed: Crossbreed - 45 entries Class 3: Best of Breed: Terminal Cross - 30 entries Class 4: Best of Breed: Open - 37 entries Class 5: Retail - 24 entries 3

4 THE FINAL The final was held at the Upper Clutha A & P Show in Wanaka on Friday 7 March. Four finalists from each of the five classes made up a finalist line-up of 20. SPONSORS The competition was once again proudly sponsored by Zoetis, with support from Mt Difficulty Wines and Lion Nathan (Speights) for the Glammies after-party. The New World Wanaka butchery department prepared the 20 finalist entries by breaking the legs down into sub-primal cuts, extracting the thick flank (knuckle) and rump, with each being coded anonymously. At the final, the rumps were prepared for tasting, being cooked to medium in a neutral-flavoured oil. The audience was able to sample the finalist thick flanks, although this did not contribute to the final result. Each finalist rump was tasted by a panel of seven judges: Beef + Lamb New Zealand Consulting Chef Graham Hawkes; Olympic medallists and Beef + Lamb New Zealand Iron Maidens, Sarah Walker, Sophie Pascoe and Lisa Carrington; Beef + Lamb New Zealand Ambassador Chefs, Darren Wright, Head Chef and Owner at Chillingworth Road, and Head Chef at True South Dining Room, Ben Batterbury and Prime Minister John Key. The results were announced at an Awards Ceremony at the end of the day, followed by the Glammies After Party. The final was further supported during the Wanaka Show by a butchery showcase by the Pure South Sharp Blacks, a joint cooking demonstration by Darren Wright and Ben Batterbury and butchery and cooking demonstrations with New World Centre City butcher Paul Mason and Beef + Lamb New Zealand Consulting Chef, Graham Hawkes. PRIZES The Grand Champion received the Golden Lamb Awards Trophy, a magnum of Mt Difficulty Pinot Noir and a cheque for $2000. The winning retailer received the Grand Champion Retailer trophy and a bottle of Mt Difficulty Pinot Noir. EVENT PUBLICITY Media coverage of the 2014 event has been extensive. From the first press release in December 2013 to date, there has been over 40 press clippings including stories online and radio interviews. A video news release was sent to TVNZ and TV3 and the various online news desks. FEEDBACK All involved in the competition will be given the chance to provide feedback. We value all suggestions and ideas, and these are considered for future planning. The majority of feedback received to date has been positive. In addition, the winners of classes 1, 2, 3 and 4 won an engraved plaque, a cheque for $500 and a bottle of Mt Difficulty Pinot Noir. All remaining finalists and the processor of the winning entry received an engraved plaque. 4

5 RECOMMENDATIONS FOR 2015 Based on entry numbers, widespread media coverage and positive feedback received, Beef + Lamb New Zealand Inc. recommends the Beef + Lamb New Zealand Golden Lamb Awards, aka the Glammies, continue in a similar format in The classes implemented for the 2013 competition, and used in 2014, be reinstated for the 2015 competition. Further consideration will be given to the acknowledgement of the winning plant who processes the winning farmer entry. Further recommendations pertaining to the detail of the competition process, including the activities surrounding the final in Wanaka, will be made when feedback has been considered. 5

6 ANALYSIS BY CARNE TECHNOLOGIES Carne Technologies provided the organisers with comprehensive results and recommendations, from which the finalists were chosen. They have given the following explanation of each test undertaken on the competition entrants, results of which can be found on the following pages. TENDERNESS Tenderness is based on the New Zealand Beef and Lamb Quality Mark Standards. It is measured with a tenderometer; a mechanical tooth that determines the amount of force required to bite through a sample of cooked meat and referred to as kilograms shearforce (kgf). It has been demonstrated very tender meat, as judged by consumers, is between 3 and 5 kgf. Below 3 kgf, meat begins to lose its structure and its textural characteristics while meat with tenderness measurements 7 kgf and above requires progressively more chewing. Therefore data from the tenderometer is categorised as follows: Less than 5kgF = very tender 6-7kgF = tender 8-10kgF = acceptable 11kgF and higher = unacceptably tough The kilogram shearforce standard deviation (kgf SD) indicates the tenderness variation within a sample. The higher this figure, the more inconsistent the tenderness. The typical standard deviation of tender meat is less than 1.0kgF ideally around 0.5kgF or less. ph Meat should be below ph 5.80 to avoid ultimate ph-associated toughness. High ph (over ph 6.00) is typically associated with dark coloured meat and reduced shelf life due to microbial spoilage. of the total leg. Factors affecting yield include genetics and the environment the animal is raised in. SUCCULENCE Water binding capacity (wbc) is a measure of the amount of freely available water, which is loose and not bound by the meat structure. As meat ages, protein denaturation occurs and breakdown of the muscle fibres releases water, as drip and/or cooking loss. If water remains bound within the meat there is less drip and cooking loss and the meat will be juicy and succulent. COLOUR (a*) Meat colour is an important attribute of meat quality and consumers want a bright cherry red meat colour. The a* values, measured by the Minolta colorimeter, indicate the redness of the meat; a high value represents a bright red cherry colour. For lamb, an a* value of less than 12 is deemed unacceptable (usually seen after 5-7 days of retail display). For the Glammies, colour was measured after 4 hours of blooming time under simulated retail conditions and we would expect a* values of greater than 20. COOKING LOSS Cooking loss describes the fluid expressed from a meat sample during the cooking process. The normal expected range of cooking loss is 25-30% and higher levels of cooking loss reduce eating quality resulting in the meat being dry. YIELD The retail meat yield of the lamb legs was obtained by boning out the full leg cut into the five main sub-primals: rump, topside, silverside, thick flank (knuckle); and shank, using a standard commercial cutting and trimming procedure. Following further dissection into the components of bone, fat and meat, the saleable meat yield was calculated and expressed as a percentage 6

General News, page cm² Rural - circulation 20,589 (Fortnightly) ID PAGE 1 of 2 Glammies finals spot not just a one-off By DIANE BISHOP Former Glammies winner Donald Morrison has again made the finals of the 2014 Beef + Lamb New Zealand Golden Lamb Awards. The Waikaka Valley farmer won the competition in 2012 with his Growbulk sheep and was named in the top 20 of this year s competition with his Growbulk-Charrolais entry. I m absolutely rapt. I always had the feeling it was a one-off and I didn t think I would make the finals again, Morrison said. A total of 158 entries were received in the competition and they were whittled down to 20 after stringent scientific testing at Carne Technologies. The top cuts will be judged for taste and tenderness by a panel of celebrity judges at the Upper Clutha A&P Show in Wanaka this Friday and feature a strong southern lineup. Morrison said winning the competition had been great for the promotion of the Growbulk which comprises equal parts Romney, Texel and Poll Dorset. He said one of the secrets to his success had been letting his sons select his sheep for the competition. His eldest son Lochie selected his winning sheep in 2012 and this year youngest son Dirk had his turn. I picked my own sheep last year, but didn t get anywhere. It pays to let the boys pick them. Morrison also has strong links to Ashhurst farmer Forbes Cameron who breeds Growbulks and has again made the finals after winning the Glammies in However, Cameron had made the final this year with a romney entry. 36 APPENDIX 1: 2014 COMPETITION PROCESS 1. Farmers and retailers notified of the competition in November via Beef + Lamb New Zealand s databases and through media releases published by rural, mainstream and online media. 2. Entry forms, along with the $75 incl. GST entry fee, were returned to Beef + Lamb New Zealand by 6 December On this form, entrants stated their chosen class and processing plant. 3. Classes were then verified by an industry expert, before a confirmation letter was sent to entrants and their processor was notified. 4. Mobs of lambs were sent to the processor where one was randomly selected. The two hind legs were sent to Carne Technologies in Cambridge (one remains fresh for testing and one frozen for use at the final). 5. Yield, ph, tenderness, colour and succulence were tested by Carne Technologies. 6. Finalists were chosen based on the results of meat quality (made up of tenderness, succulence and colour) and yield results. 7. Finalists were tasted on five criteria: aroma, taste/flavour, tenderness, juiciness and texture. APPENDIX 2: CONDITIONS OF ENTRY As outlined on the entry form, the conditions were: One entry per class. Entry form must be returned to Beef + Lamb New Zealand by Friday 6 December, 2013 at 5pm. Stock to be at the nominated plant for processing in the week commencing Monday 13 January, Breeds to be entered into a class as defined by the class definitions as listed in the entry form. Carcass weight range: 15-21kg. Mob size: Lambs must be grade Y or P. 75% of the mob must meet weight and grade criteria to be eligible as a finalist. Lambs must be weaned a minimum of 2 weeks from the ewe. Stud breeders are eligible to enter, but can only enter commercial stock. All product must be of Beef + Lamb Quality Mark standard. 36

37 APPENDIX 3: COMPETITION CLASSES Class 1: Best of Breed: Traditional The terminal breed influence in the lamb must be no more than 25%. The sire and dam breed must be dual purpose breeds in the form of purebreds, composites or crossbreds. Class 2: Best of Breed: Crossbreed The terminal breed influence in the lamb must be no more than 50%. The dam must be a dual purpose breed either in the form of a purebred, composite or crossbred and the sire a terminal breed either in the form of a purebred, composite or crossbred. Class 3: Best of Breed: Terminal Cross The terminal breed influence in the lamb is greater than 50%. The dam must be either a crossbred or a composite and can contain either dual purpose or terminal breeds. The sire must be a terminal or a predominantly terminal breed. Class 4: Best of Breed: Open This class is open to all breeds. Class 5: Retail This is an open class with no restrictions other than all product must be of Quality Mark standard. The classes are based on sire and dam combinations of the following three defined breed types: 1. Breed type A Specialist ewe breeds developed before Breed type B Ewe breed types developed since 1985 and including composites, or breed crosses containing a maximum of 50% terminal sire (meat breed) type. 3. Breed type C Meat breed (terminal sire) types OR breed crosses containing greater than 50% terminal sire (meat breed) type. Each Glammies class is defined with reference to the above three breed types in terms of the sire x dam of lambs entered for the competition as follows: Class 1 Class 2 Class 3 Class 4 (Traditional) Ewe breed A x A or A x B A x C or B x B B x C or C x C Any breed type combination for sire and dam 37

Taste/Flavour: Is the flavour of the cooked meat suitable and as expected of this cut? Is it pleasantly meaty and enjoyable to eat? (out of 25) 3. Tenderness: Is the cooked meat easy to cut and eat, free of sinew? (out of 25) 4. Juiciness: Is the cooked meat suitably juicy as expected from this cut? (out of 20) 5.
