The cntrl mdule shuld be checked fr dust, grime, r grease arund the vent luvers and wiped n a regular basis. Because the rasting is dne at lw temperatures, there is very little grease build-up. Over time, hwever, grease will begin t stick t the walls and flr f the unit. Ht sapy water with a nn-abrasive pad r ven cleaner fr stainless steel is best fr cleaning the interir. Fr the exterir, we recmmend ht sapy water with a nnabrasive pad, r stainless steel cleaner and plish. Always wipe with the grain. Failure t remve greasy build-up can cause bacterial grwth within the ven cavity. It can als impair the accuracy f the temperature sensrs that keep the heat cycling prperly. ο DO NOT use a pressure washer r water under pressure. Avid getting water inside the cntrl mdule, because it ruins the electrical cmpnents and VOIDS THE WARRANTY. ο NEVER lcate yur Ryaltn unit next t grease emitting equipment such as deep fryers r griddles. ο DO NOT blck luvers r cling fans in the cntrl mdule. Ding s will cause the unit t verheat and shut dwn the ven. CLEANING PROCEDURE 1. Press pwer switch ff 2. Turn ff circuit breaker 3. Clean interir and exterir. 4. Turn n circuit breaker
INSTATLATION LEVELING THE OVEN T level the ven, screw the leg feet in r ut. 1. Screw the adjustable feet all the way int the leg. Check that the ven is level n the frnt, back and sides; ifnt adjust accrdingly. 2. After leveling, the distance frm the underside f the ven t the flr shuld be clse t 7-3/16" (18.3 cm). Nte: This measurement is imprtant fr dcking alignment f transprt cart. ALIGNING THE DOCKING MECHANISM 1. Open the ven dr fully. 2. Mve and latch the transprt cart int place at the frnt f the ven. The tw alignment pins n the frnt f the cart shuld line up with the channeled penings in the dcking assembly. The lcking bar must lck t the dcking assembiy. This adjustment can be made by mving the dcking assembly in r ut until the lcking bar is fully engaged nt dcking assembly. Tighten fur blts with wrench. 3. Align the inner vertical edge f the tracks n the transprt cart with the same vertical edge f the tracks lcated n the ven flr. This adjustment can be made by mving the vertical tracks n the ven flr either left r right. Tighten the six blts with a wrench. 4. Level the tracks n the transprt cart t the same height as the tracks n the ven flr. This adjustment is made by rising r lwering the nuts n the six leveling screws lcated (3X) n each side f the transprt cart. 5. When the transprt cart lcks prperly t the frnt f the ven, the unit is ready fr lading peratin. Transprt Cart Tracks
USING THE TRANSPORT CART When lading the ven with the transprt cart, be sure the cart is securely lcked t the ven befre transferring the lad. T mve the lad int the ven, step dwn n the upper ft pedal and push the prduct frward. The rll-in basket dlly shuld be inserted all the way int the ven befre remving the transprt cart. This prevents the lad frm spilling and allws the dr t clse prperly. T remve the transprt cart frm the ven, step dwn n the lwer ft pedal and pull the cart away frm the ven. Clse the dr. While unlading the ven, the transprt cafi must be securely lcked t the frnt befre transferring the lad. The lad is pulled frm the ven nt the cart. WARNING!! Be sure the rll-in basket dlly is lcked securely n the transprt carl befre releasing the cart frm the ven.
OPERATION Oven Cntrls Cmpnent Descriptin There are tw rws f switches and cntrls n the left side f the panel. The tp set f cntrls perate the upper mtr and heating elements. The bttm set f cntrls perate the lwer mtr and heating elements. 1. THERMOSTAT - Cntrls ven temperature. 2. OVEN READY INDICATOR LIGHT - When lit indicates the elements are perating. When the light ges ut. the ven has reached perating temperature. 3. BLOWER SWITCH - Cntrls pwer t the blwers. high speed and lw speed. 4. COOL DOWN SWITCH - Cntrls pwer t the cl dwn fans. These switches shuld be left in the AUTO psitin t allw prper autmatic peratin f the blwer with the drs clsed. Fr rapid cl dwn, use the MAN psitin t perate the blwers with the dr pen. 5. TIMER - Cntrls lensth f the ck tirne. Cntrl Operatin Nte: The upper sectin is wired separately frm the lwer sectin. They may be perated independently r simultaneusly l. Place the BLOWER switches (3) in the high psitin. Place the COOL DOWN switches (4) in the AUTO psitin. 2. Turn the THERMOSTATS (1) t the desired ck temperature. NOTE: When the upper and lwer cntrls are perated as a single unit, bth thermstats shuld have the same temperature setting. 3. Preheat until the OVEN READY INDICATOR light (2) ges ut. 4. Lad prduct int the ven. 5. Sethe TIMERS (5) fr the desired ck time. 6. Remve the prduct when the time expires.
