SECTION 11419 UTILITY DISTRIBUTION SYSTEMS PART 1 GENERAL 1.01 SECTION INCLUDES A. Related Sections: 1. 11401 - Custom Fabricated Equipment. 2. 11405 - Cooking Equipment. 3. Division 15 - Water supply, drainage, gas, and related piping. 4. Division 16 - Electrical connections. 1.02 SUBMITTALS A. Shop Drawings: 1. Submit shop drawings with dimensioned plans prepared in minimum 1/4" scale showing mechanical/electrical roughing-in data for each piece of equipment and their relationships to the space the equipment occurs. 2. Include accurately dimensioned details and locations of any special wall openings required by items of equipment extending through walls. 3. Include plans, elevations, and sections, all dimensioned and suitable to be used for actual construction of items specified. B. Product Data: Submit manufacturer's name, descriptive data, mechanical connections required, and other information necessary for review of standard manufactured articles and equipment. 1.03 QUALITY ASSURANCE A. References: 1. Comply with applicable standards or requirements of the following: a. National Sanitation Foundation (NSF). b. Underwriters Laboratories Listings (UL). c. B. Source Quality Control: 1. Manufacturer: Provide equipment manufactured by one manufacturer except where otherwise noted, uniform throughout as to method and type of construction used. 2. Nameplates: a. Identify model and manufacturer with appropriate nameplates. b. Show electrical characteristics on appropriate nameplates. 1.04 SPECIAL REQUIREMENTS A. Modify accepted manufacturer's standard items and construction to conform with special requirements listed as follows: 1. Special Requirements Gas: a. Provide minimum of 1 gas drop of at least 3/4" NPT (255,000 BTU) extended from raceway and capped for future use for each 6 feet of horizontal gas pipe, regardless of number of specified drops. b. Quick disconnects furnished for connection of gas hoses from appliances shall not allow connection of other type of plumbing hoses, even if they are the same size. 2. Special Requirements Water: a. Wherever there is an 8-foot horizontal run of hot or cold water supply without a specified drop, provide a minimum of one each 3/8" NPT drop extended from the raceway and capped for future use. 3. Special Requirements, Labels, Wiring Diagrams, and Plumbing Diagrams: a. Clearly label remote breakers for each piece of equipment they serve. b. Breaker plates shall bear a label clearly indicating amperage, voltage, phase of breaker, and item number and type of equipment to be connected. c. Breaker plates located beneath raceways or otherwise hidden from normal view shall have a Project No. SPECIFICATION GUIDELINES 11419-2
duplicate identification label located in plain view and designating location of plate. d. Color-code and word or letter identifying utilities behind each side access panel in a raceway. e. Clearly label shutoffs, fuses, circuit breakers, or components requiring periodic maintenance, service, or adjustment and locate on the external portion of the raceway or chase. f. Provide wiring and plumbing schematics affixed to inside of access panels for raceways, control boxes, disconnect controls and energy management systems and indicate location of schematics on shop drawings submitted for approval. 4. Special Requirements, Component Location, and Access Panels: a. Side Access Panel: Maximum 48 inches long. 1) Where a component, requiring periodic access for maintenance, service, or adjustment, is located behind a side panel in the raceway, side panel shall not exceed 24 inches in length. b. Any fuse or circuit breaker provided for circuit protection in a raceway shall either be located externally or in the riser behind a hinged access door. 5. Special Requirements Indicator Lights: a. Indicator Lights: Snap in or screw in incandescent type with slip on or screw on terminals. b. House breaker status indicator lights located in end panel of island raceways or face of wall type raceways in a recessed panel with a clear plexiglass cover to protect them. 6. Special Requirements Breaker Plates: a. Provide each breaker plate with a separate ground wire, minimum 12 inches long, to maintain ground when plate is removed from the raceway mounting. b. Provide breaker plates with a hinged waterproof cover over receptacle. c. Provide breaker plates located within 24 inches of the floor, or in a location where they are Project No. SPECIFICATION GUIDELINES 11419-3
prone to get wet with a hinged waterproof cover over breaker switch. d. If an indicator light or other device is located on a breaker plate, it shall be in a full recess or otherwise protected from damage. e. Color-code and mark breaker switch to indicate trip status without relying on operation of an indicator light. f. Make breaker located in a raceway interchangeable with breaker plate located in a power chase. g. Provide breakers serving refrigerators, freezers, icemakers, or otherwise critical equipment with a lockout clip to prevent accidental shutoff while allowing normal tripping. 7. Special Requirements Safety: a. Single and Two Pole Breakers Up to 30 Amps: Provide with GFI per NEC. b. Manual Trip Mechanism: Provide to trip electric shunt at breaker and easily accessible location. c. Bus Bar Insulation: Each electrical bus bar individually insulate for its full length. d. Safety Insulated Shield: Provide electrical service connections and terminals with a safety insulator shield. e. Electric Shutoff: Accomplish by the main electrical service to raceway being provided by electrical contractor. 8. Special Requirements Other: a. All components used in the raceways, chases, and the line, shall be readily obtainable locally. b. Components shall not require soldering to connect or install. PART 2 PRODUCTS 2.01 EQUIPMENT (KITCHEN AND SERVING LINES, SPACE ( ) A. Item # : Utility Distribution System - Greitzer Model "Single Disconnect" (with built-in garbage disposer control) shall be 5'-6" long vertical raceway, 6 inch x 18 inch cross section completely prewired and preplumbed for final connection of electrical and cold water for Item # and hot and cold water for Item #. 1. Attach bottom end of vertical raceway to raceway extension built-into the backsplash of Item #. 2. Raceway manufacturer shall furnish a 14 inch long section of matching raceway to custom stainless steel fabricator. 3. The raceway shall be incorporated into Item #. 4. Construction: 18 gage, Type 304 stainless steel with #4 mill finish. 5. Service Requirements: 3/4" cold water, 3/4" hot water connection; 40 amp 120/208/60/3, 4W. a. Electrical: Provide liquid tight flexible metallic tubing exiting from bottom end of raceway to serve Item #. b. Disposer Control: Provide NEMA 1 enclosure, 18 gage, Type 304 stainless steel with #4 mill finish; install in face of the riser. 1) Enclosure Includes: a) Automatic reversing control. b) Dual magnetic starters. c) Control transformer. d) "Run" indicator light. e) Start-Stop button. c. Disposer (Item # ) and Vegetable/Salad Sink (Item # ). 1) Water supply shall be completely prepiped within riser to allow, in addition to supply connections at top of unit, connections from bottom of unit to connect Items # & #. 2) Piping Includes: a) 3/4" vacuum breaker. b) 3/4" flow control. c) 3/4" solenoid valve. d) 1/2" union/ 3/4" union. B. Item # : Utility Distribution System - GREITZER Model IUD raceway system 12'-0" long, 12 inches x 18 inches cross section with 6 inch peaked top completely prewired and preplumbed for final connection for electricity, hot water, cold water, and gas to service equipment Item # and lights for Item # (Hoods # and # ) and exhaust/makeup air /strip heater system EMF # (1HP/1HP/8KW/480/60/3) and exhaust/makeup air/strip heater system EMF # (1HP/1HP/8KW/60/3). 1. Utility distribution system shall consist of 2 sections, each section 6'-0" long with 3 risers and no pedestals and shall suspend from 3 points through Hoods # and #. 2. Provide complete with ground fault equipment protection, fire fuel shut-off, point-of-use breakers with remote indicator lights, flexible quick disconnect plumbing hoses for all connected equipment and UL listed matching special purpose power supply cord and plug sets for each connection plate, exhaust and makeup air fan control packages, hood light controls and makeup air strip heater controls. 3. Service Requirements: 3/4" cold water connection, 3/4" hot water connection, 1-1/4" looped gas service, 225 amp, 120/208/3PH, 5W with main service breaker (no tripping) equal to bus capacity. 4. Construction: Fixed risers, 6 inch peaked top, end caps and raceway exterior panels shall be constructed of 16 gage, Type 304 stainless steel with #4 mill finish and hung from overhead structural system with pipe supports (black iron pipe). a. Filler Panels: Provide minimum 22 gage stainless steel filler panels (2 required) to close openings in underside of hood assembly between risers. b. Bumper Strips: Provide neoprene bumper strip full length of both sides. 5. Electrical: Electrical compartment shall be completely enclosed with sheet metal housing accessible by removal of concealed pan head type machine screws having a minimum thread depth of 1/2". a. Bus Bar: 1) Provide 4 conductor bus bar full length of raceway as internal main feeders for electrical fired cooking equipment. a) Bus bar shall be manufactured from 100 percent copper and mounted on nonconductive insulators, spaced at 24 inch to 30 inch centers and equipped with connection lugs for future main service. b) Bus Capacity: 120/208/3PH, 280 amps. b. 1) Provide 5 inch x 9 inch, 16 gage, stainless steel connection plates at 12 inches on center the full length of raceway. 2) As required by each of Items # equip the appropriate connection plate with a point-of-use circuit breaker with UL listed knob type watertight actuator and status indicator light. 3) Status lights shall be dual color (GREEN-ON, RED-OFF) LED type 24 volt, constant-on. 4) Connection plate shall also be equipped with grounding type receptacle and matching power supply cord having specific NEMA polarized configuration and metallic label with permanently lettered electrical characteristics. c. Light Controls/Hood # : Provide switch, circuit breaker, and power supply pre-wired in 10 foot long flexible conduit ready for connection to light junction box in hood. 1) Install switch in front riser. d. Light Control/Hood # : Provide switch, circuit breaker, and power supply pre-wired to 10 foot long flexible conduit ready for connection to light junction box in hood. 1) Install switch in rear riser. e. Fan/Strip Heater Controls/Hood # /EMF # : Provide NEMA 1 Enclosure 18 gage, Type 304 stainless steel with #4 mill finish, install in front riser. 1) Include the following: a) Adjustable time delay of 0-5 minutes. b) Magnetic starter with thermal overload and reset station. c) Malfunction alarm, 24 volt, solid state horn, and light. d) On-Off indicator lights. e) Manual control for strip heater with indicator lights. f) Pressure differential horn and light warning system to indicate condition of filters with 110v to 24v transformer. Fan/Strip Heater Control/Hood # /EMF # : Provide NEMA 1 enclosure 18 gage, Type 304 stainless steel with #4 mill finish, install in rear riser. 1) Include the following: a) Adjustable time delay 0-5 minutes. b) Magnetic starter with thermal overload and reset station. c) Malfunction alarm, 24 volt, solid state horn and light. d) On-Off indicator lights. e) Manual control for strip heater with indicator lights. f) Pressure differential horn and light warning system to indicate condition of filters with 110v to 24v transformer. g. Duplex Convenience Outlet (DCO): 20 amp 120/1. Provide at each end in end cap. h. Fire Fuel Shutoff: 1) Provide for gas services for individual pieces of equipment per NFPA No.96. 2) Gas solenoid valves shall be equipped with 5 second delay to eliminate instantaneous power interruptions from causing nuisance pilot outages. a) Entire shutoff system shall be completely pre-wired and pre-plumbed, requiring only one final connection by the electrical contractor from 120v power source in fire extinguishing system relay or micro-switch (STDP, Form C relay when both gas and electric are specified). b) Provide manual reset for gas and each individual electric connection. c) External solenoid valves, contactors, relays, or shunt trips are not allowed. i. Duplex Convenience Outlet (DCO): 20 amp 120/1. Provide at each end in end cap. 6. Plumbing: a. Plumbing compartment shall be isolated from electrical compartment. b. All piping and disconnect in system shall be color-coded. c. Hot and Cold Water Piping (including individual branch pipe connections: 1) Hard temper type "L" copper tubing with copper sweat type solder fittings. 2) Each branch connection shall be provided with brass double shutoff quick disconnect assembly of twin wall construction, including brass bellows type corrugated hose with built-in stainless steel restraining chain capable of withstanding an in-tension pull of 3,200 lbs., bursting pressure of 5,000 lbs., and crush pressure of 9,000 lbs. 3) Provide Polytec clear coating with encapsulated color-coding. d. Valves and Gauges: 1) Provide direct reading combination pressure temperature gauges for incoming services for hot water and cold water. 2) Provide quarter turn ball type shutoff valves for all gas and water main incoming services. 3) Provide quarter turn ball type shutoff valve on raceway for gas. 4) Piping shall be connected to individual equipment. e. Hose Bibb: Provide 140 degree hot water threaded hose bibb beneath each end of raceway. f. Pot Filler: 1) Provide T & S Pot filler with spray head and brush cleaning attachment with 5 foot hose. 2) Include mixing valve and stainless steel bracket to extend outward between the kettles (Item # ) for hanging. 3) Pot Filler: Integral part of raceway. g. Gas Piping: 1) Black iron pipe with welded threadlets to branch connections and drip tee on service riser. 2) Each branch connection shall be provided with quarter turn steel ball type shut-off valve, cadmium plated steel quick disconnect Project No. SPECIFICATION GUIDELINES 11419-9
assembly of twin wall construction, including stainless steel bellow type corrugated hose with built-in restraining chain capable of withstanding an in-tension pull of 3,750 lbs., bursting pressure of 6,000 lbs., and crush pressure of 9,000 lbs. 3) Provide Polytec clear coating with encapsulated color-coding. 7. Control Center: a. Provide recessed control panel mounted in each end cap (Model IUD). 1) Control panel shall include DCO with breaker and separate indicator lights numerically coded to indicator lights on each connection to show "power off", fire fuel shutoff with delay, warning light and solid state whistle. 8. Mounting Pipe Supports (black iron pipe): Pipe, brackets, hangers and miscellaneous hardware furnished by Utility Distribution System manufacturer. C. Item # : Utility Distribution System - GREITZER Model "Power Column", 12 inch x 12 inch cross section, 18 gage, Type 304 stainless steel, with #4 mill finish. Divide system into 2 separate compartments, each 6 inches x 12 inches. 1. "Power Column" shall extend from finished floor to a minimum of 2 inches above the finished ceiling. 2. Unit shall be completely pre-wired and pre-plumbed for electric, cold water and hot water to serve Item #. 3. Provide UL listed matching special purpose power supply cord and plug set, flexible hose with mixing faucets and one DCO, 20 amp 120/1. 4. Service Requirements: 1/2" cold water connection, 1/2" hot water connection, 70 amp, 120/208/60/3PH, 4W. a. Electrical: Provide digital timer and set mechanism. b. 5. Plumbing: a. Water supply shall be completely pre-piped within riser. b. Provide complete with T & S Pot Filler with spray head and brush cleaning attachment with 5 foot hose. c. Include mixing valve and stainless steel hanger bracket for flexible pot filler. d. Provide hinged access cover for access to plumbing compartment. 6. Menu Card and Time Chart Holder: a. Provide menu card type holder for notes, etc., and holder for laminated HCM time chart. b. Include laminated time chart. D. Item # : Utility Distribution System - GREITZER Model WUD raceway system 8'-0" long, 6 inches x 18 inches cross section with sloped top completely pre-wired and preplumbed for final connections for electric, hot water, cold water and gas to serve equipment Items # and lights for Item # Hood # and exhaust/makeup air/strip heater system EMF # (1-1/2HP/15KW/480/60/3). 1. Unit shall consist of one section with one riser at the right end, no pedestal and shall be wall mounted. 2. Riser shall extend into Hood #. 3. Provide complete with ground fault equipment protection, fire fuel shutoff, point-of-use breakers with remote indicator lights, flexible quickdisconnect plumbing hoses for all connected equipment and UL listed matching special purpose power supply cord and plug sets for each connection plate, exhaust/makeup air fan control packages, hood light controls and makeup air strip heater controls. 4. Service Requirements: 1/2" cold water connection, 1/2" hot water connection, 1 inch gas service, 50 amp, 120/208/60/3PH, 4W. 5. Construction: a. Fixed Riser, 6 inch sloped top, and raceway exterior panels shall be constructed of 16 gage, Type 304 stainless steel with #4 mill finish all prepared for wall installation by means of separate wall mounted channels. b. c. Bumper Strip: Provide neoprene bumper strip full length of the unit. 6. Fan/Strip Heater Controls/Hood # /EMF # : Provide NEMA 1 enclosure, 18 gage, Type 304 stainless steel with #4 mill finish. a. Hose Bibb: Provide 140 degree hot water threated hose bibb beneath left end of raceway. 13. Gas Piping: a. Black iron pipe with welded threadlets to branch connections and drip tee on service riser. 1) Each branch connection shall be provided with quarter turn steel ball type shutoff valve, cadmium plated steel quick disconnect assembly of twin wall construction, including steel bellows type corrugated hose with built-in restraining chain capable of withstanding an in-tension pill of 3,750 lbs., bursting pressure of 6,000 lbs, and crush pressure of 9,000 lbs. 2) Provide Polytec clear coating with encapsulated color-coding. b. Valves and Gauges: 1) Provide quarter turn ball type shutoff valves for gas incoming services. 2) Provide quarter turn ball type shutoff valves on raceway for gas. 3) Piping shall be connected to individual equipment. 14. Control Center: a. Provide recessed control panel mounted on riser front. b. Control panel shall include duplex convenience outlet with breaker and separate indicator lights numerically coded to indicator lights on each connection plate to show "power-off", fire fuel shutoff with delay, warning light and solid state whistle. 15. Mounting Channels, Brackets, and Miscellaneous Hardware furnished by Utility Distribution System manufacturer. E. Item # ; Utility Distribution System - GREITZER Model "Equipment Disconnect Control", 6 inches wide x 30 inches long x 9 inches high, constructed of 18 gage, Type 304 stainless steel with #4 mill finish. "Disconnect Control" shall mount to finish floor on top of a 9-inch high stainless steel box of matching material, finished width and length. Finished assembly shall fit into cutout in lower shelf of Item # as shown on detail sheet #. 1. NEMA 1 enclosure shall contain point-of-use breaker/disconnect for Items #. 2. Service Requirements: 70 amp, 120/208/60/3PH, 4W. 3. Electrical: a. Provide safety interlock to prevent door from opening unless unit is in "OFF" position. 1) Provide 24 volt constant read, dual color LED status indicator light (GREEN-ON, RED- OFF). b. Provide separate power sensitive ground fault protection devices, with red/green LED light and test button for each piece of connected equipment. 1) Fail-safe Ground Fault System shall sense field current of all phases and shall operate regardless of improper ground connection or ground continuity. 4. Provide receptacles and matching power supply cord sets for each pieces of connected equipment. a. Locate receptacles on rear face of enclosure (facing the center of the table, Item #. 5. Duplex Convenience Outlet (DCO): Provide one duplex convenience outlet (20 amp, 120/1) at left end of rear face. 6. Fire Fuel Shutoff: Consisting of an internal relay trip mechanism in breaker/disconnect which shall interrupt power supply when activated by an external 120v circuit. 2.02 EQUIPMENT (FOOD PREP. LAB.) A. Item # : Utility Distribution System - GREITZER Model, "Power Chain" raceway system 8'-6" long, 6 inches wide x 9 inches high cross section with flat top completely pre-wire and pre-plumbed for final connection for electric, cold water, and waste to serve equipment Items # and one additional duplex convenience outlet (DCO). 1. Unit shall have one pedestal at left end and shall stand alongside of and fit over top of Item #. 2. Service Requirements: 1/2" cold water connection, 1-1/2" air-gap waste, 125 amp, 120/208/60/3PH, 4W. 3. Construction: a. Fixed Riser and raceway extension shall be constructed of 18 gage, Type 304 stainless steel with #4 mill finish. 1) Provide means for attachment to the floor and to the top rear surface of Item #. 2) Set in approved sealant material to provide watertight joints. b. Horizontal electrical compartment shall be bolted (not welded) to the top of inverted channel shaped, horizontal plumbing compartment for ease of removal for access to cold water and waste piping. 1) Provide single piece end cap to cover both electrical and plumbing compartment. c. Riser shall have vertical electrical and plumbing compartments. 4. Electrical: 1) Provide each with full height hinged panels to facilitate final field connection and future maintenance. a. Provide 5 inch x 9 inch, 16 gage stainless steel connection plates at 12 inches on center full length of front face of raceway starting at intersection with riser. 1) As required by Items #, equip Project No. SPECIFICATION GUIDELINES 11419-16
appropriate connection plate with a pointof-use breaker with UL listed knob type watertight actuator and status indicator light. a) Status lights shall be dual color (GREEN-ON, RED-OFF), LED type 24 volt, constant-on. b. Connection plate shall also be equipped with grounding type receptacle and matching power supply cord having specific NEMA polarized configuration and metallic label with permanently lettered electrical characteristics. 1) Where active plates are not called for provide blank plates for future use. c. Provide quick-connect and quick-disconnect means of separating each fire fuel shutoff and on control wiring from the Utility Distribution System. 5. Control Center: a. Provide recessed control panel control mounted in rear face of riser. b. Panel shall include duplex convenience outlet (DCO) with breaker and separate indicator lights numerically coded to indicator lights on each connection plate to show "power off". 6. Plumbing: a. Color-code piping and disconnects in system. b. Fire Fuel Shut-Off: a. Entire Shut-off System shall be enclosed requiring only one final connection from 120v power source in fire extinguishing system relay or micro-switch. b. Provide manual resets for each individual connection. c. External valves, contactors, relays, or shunt trips are not allowed. PART 3 EXECUTION 3.01 INSTALLATION A. Deliver, assemble, and install Utility Distribution System as specified. 1. Perform assembly and installation under factory authorized supervision. B. Provide drawings to appropriate trades referencing all utility service locations to Utility Distribution System and coordinate final connections. C.
