DESCRIPTION The Hydraulic Divider DC20 is made up of: A self-standing rigid chassis of folded sheet steel and with four swivelling casters. Two removable sides on hinges. A mechanically welded steel lid with stainless steel underside. A cast iron drum Cast iron heel plates Stainless steel knives. A balanced lid raised by built-in drag spring. A ajustable lid handle with taking up of play. A hydraulic system with telescopic jack (one chamber for the compression, another one for cutting up). Two pressure plugs (compression and cutting). Only one control lever to do the three division steps: Simultaneous compression and streching of dough. Cuttting by cutter up-motion. A hydraulic device for the cleaning of the blades. The round shape of the drum provides easier and uniform spreading of dough. Dough will be equally divided with a minimum pressure. The automatic motor-pump group, that it is used to raise up and down the knives and the heel plates, assures silence and a long life to the pump. Page 2
INSTALLATION FOR USE EQUIPMENT For the installation and imperative maintenance, this divider is equipped with: An aerosol spray to lubricate the drum and the heel plates. A number 4 hexagonal spanner. An instruction s book. ELECTRIC CONTROL Check the divider s separator up to know if it is compatible with your power supply. All our machines are designed with 380 V s connection then the discontact is model to 3 amperes. Plug in your electrical cable (REP. 114) to a good power line, section 4 x 1,5²: 3 phases +Earth. Open the lid Push the front side lever (REP. 146) down. If the heel plates do not rise up, invert 2 phases at the plug. MECHANICAL PREPARATION We have plentifully greased our machine for stocking and transport thus you will have to eliminate all excess oil. Clean the drum (REP. 152), the heel plates (REP. 201) and the lid (REP. 107). Do not use water, soap or chemical products for cleaning. Use a dry rag only. Page 3
FUNCTIONING DOUGH S PREPARATION Use the plastic or feeding pans which are just a little bit smaller than the drum (diameter 490 mm) to weigh the dough s quantity. Put the dough in these pans, weigh, flour lightly. INTRODUCTION OF THE DOUGH INTO THE DIVIDER Keeping the heel plates and the blades in the lower position or wherever you need depending of dough s quantity, flour the drum and then put the dough into the divider trying to get an equal distribution using your hands, then flour lightly. Close the lid (REP. 107) and lock it pushing the lever (REP. 101) to the right. CUTTING-UP OF THE DOUGH Push the front side lever (REP. 146) down and keep it there, the heel plates (REP. 201) will ascend and distribute the dough. The blades (REP. 226) will ascend in their turn and they will cut it up. When the sound changes, loosen the lid s lever (REP. 146), then rise the lever just a little bit to avoid any pressure over the lid. Open the lid bringing the front side lever (REP. 101) back to the left. Push the front lever (REP. 101) down again to have the heel plates (REP. 201) rised. Take the dough s balls out. At first, sometimes the inside and outside dough s ball weigh will be diferent in the begining but that is going to disappear in the following cut-outs. Page 4
MAINTENANCE Maintenance in the DC 20 is minimum, anyway to keep it working as normal, the following operations are essential: DAILY CLEANING Clean quickly the heel plates (REP. 201), the drum (REP. 152) and the lid (REP. 107) using a plastic dough scraper. Put the blades (REP. 215). Leave the lid (REP. 107) open. LUBRICATION Every day after working and cleaning and without washing up, oil lightly the cast iron drum s periphery to be sure of a good raising up and down of the heel plates and the blades. Each two or tree days, after working, the blades must be lightly oiled, you have to bring them up to do this operation. WHEN THE JOB IS DONE THE LID MUST BE LEFT OPEN, THE HEEL PLATES IN THE BOTTOM OF THE DRUM AND THE BLADES IN THE TOP. ELIMINATION OF DRIED-UP DOUGH Although the heel plates are very accurate, sometimes a small quantity of dough slips between the heelplates and the blades. It is necessary to take it out at least once a month. You will be able to do it taking off the one side steel sheet (REP. 120 and 137) using the number 4 hexagonal spranner. YOU HAVE A GUARANTEE FOR THIS MACHINE. THIS ONE WILL DISAPPEAR IF YOU HAVE NOT FOLLOW OUR MAINTENANCE INSTRUCTIONS. Page 5
