Coconut Pecan Cake Ingredients: Cake: 5 whole eggs, separated 1 2 cup butter 1 cup vegetable oil 1 cup granulated sugar 1 Tbsp. vanilla 3 4 cup sweetened flake coconut zest from 1 orange 2 cups flour 1 tsp. baking soda 1 tsp. baking powder 1 cup buttermilk Frosting: 12 oz. cream cheese, room temperature 1 cup butter, room temperature 1 tsp. vanilla 1 lb. powdered sugar 1 1 2 cups chopped pecans, toasted, divided 1 cup sweetened flake coconut Directions: Cake: Preheat oven to 350 degrees. Grease and flour 2 (9 inch) round cake pans. Beat egg whites until stiff peaks form, and set aside. In a large bowl, cream together butter, oil, and sugar until light and fluffy. Mix in the egg yolks, vanilla, coconut, and orange zest. In a separate bowl, mix flour, baking soda, and baking powder. Alternate adding buttermilk and dry ingredients to wet ingredients. Mix until just combined. Then, fold in egg whites. Pour evenly into prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean. Remove from oven and allow to cool for 15 minutes, then transfer the cakes onto cooling racks to cool completely. Frosting: In a medium bowl, combine cream cheese, butter, vanilla, and powdered sugar. Beat until light and fluffy. Stir in 1 cup of the chopped pecans and coconut. Before stacking cakes, spread frosting between the layers and on top of cake. Sprinkle the cake with reserved pecans.
